Quiche – Great For Entertaining

It has been years since I’ve made quiche. When I was first married, it was a regular on the menu. Time moved on and quiche moved out. But now we’re having a bridal shower at my house and quiche is back!

I’m practicing. No way will I make something for the first time and hope that it comes out right. Getting the mistakes out of the way first!

Broccoli and Cauliflower Quiche

I made a practice Quiche Lorraine last week and it was too strong with onion. I like onion but I’m cutting back on the amount  from 1/3 cup to just 1/4 cup. See, I’m not so crazy. A practice run pays off!

Organizing Strategy: Bacon is a key ingredient in Quiche Lorraine and I will be serving 3 to 4 of them. That calls for a lot of bacon! So, this week (two weeks prior to the event) I will fry pounds of bacon and freeze it all.

Bacon frying is messy. I definitely do not want to be doing that the week of the party. In fact, I will probably cook it in the oven. Oven fried bacon is so easy!

Now, time to make the broccoli cauliflower quiche There could be as many as 40 guests so, I need to make 3 to 4 of these, as well. I am going to make them a day in advance and rewarm before serving. We’ll see how it goes. Today is “dress rehearsal” for the big day.

Broccoli – Cauliflower Quiche

Ingredients

9″ deep dish pie crust
4 eggs
1 cup milk
2 T. flour
2 cups shredded cheese (mild cheddar & mozzarella were used here)
1 to 1 1/2 cups thawed broccoli and cauliflower pieces

dash salt and pepper

Directions

Preheat oven to 400° to precook the crust.
NOTE: Reset the oven to
350° and let it cool to that temperature 

before baking the quiche.

Thaw the frozen deep dish pie crust.
Poke the sides and bottom of the crust to vent.
Place crust on cooking sheet and bake at 400° for 10-12 minutes.

Remove crust from oven and cool.

In a large mixing bowl, slightly beat 4 eggs.
Add milk, shredded cheese, flour, salt and pepper.
Cut any large broccoli and cauliflower pieces into smaller pieces.
Fold in the veggies.
Pour the mixture into the crust and bake for 55-65 minutes.
Cool and refrigerate.
Slice into 8-10 slices and reheat in the oven before serving.
