I love tofu. For some people, it is an acquired taste. For me, it was an instant winner! Tofu is so easily assimilated in recipes, my favorite of which is stir fry.
Only recently have I gained a further appreciation of this fine meat-substitute, other than its taste. Tofu alleviates menopause symptoms very well and is low-carb/low cal, which fits great with my new weight loss venture. (5 pounds gone. 15 more leaving.) There are many more exciting health benefits of tofu but you can study that for yourself.
Here is my favorite tofu stir fry recipe – so easy to make.
Ingredients
1/4 brick Extra firm tofu
1/2 cup Zucchini squash cut in bite sized pieces
1/2 cup green, yellow and red peppers, sliced
Garlic powder to taste
Salt, dash
Pepper, dash
2 T. Olive Oil
1/4 cup shredded mozzarella cheese
Heat oil in non-stick skillet on medium-high.
Slice 1/4 off the brick of tofu.
Return the larger part to a plastic container filled with fresh water. Seal and refrigerate for future use.
Cut the slice of tofu in half, lengthwise.
Press it with clean paper towel to get the excess water out.
Cut the tofu in bite-size squares and add to the skillet.
Sprinkle with garlic, salt and pepper.
Toss using a spatula.
Add zucchini and pepper slices.
Stir fry some more.
When tofu is slightly golden and zucchini softened a bit, put the stir fry in a bowl, top with mozzarella and enjoy!
