This is one of those recipes that was such a welcome discovery. I had been low-carb dieting very successfully for a while, but I was getting bored with the same old recipes.
Eggs and bacon for breakfast.
Salad for lunch.
Meat and veggies for dinner.
I enjoyed the food but I was needing something different. So, there I was decluttering my office when I came across a recipe that I had torn out of a magazine years ago. It looked so inviting and, at closer look, was totally low-carb. 2 carbs per serving. I had all the ingredients on hand so I went at it. It’s my new favorite. Asparagus Frittata. So easy to make and absolutely delicious!
Asparagus Fritatta Recipe
Ingredients
5 eggs
¼ cup milk or half & half
¼ cup shredded cheddar cheese
¼ tsp salt
¼ tsp pepper
½ cup fresh asparagus cut into pieces
Directions
Preheat oven to 375
Spray glass pie plate with non-stick spray.
Combine eggs, milk, cheese, salt & pepper in a mixing bowl.
Beat with a fork.
Mix in asparagus pieces.
Pour into pie plate.
Bake 20 minutes.
Remove from oven and cool 5 minutes.
Cut into quarters and serve.
