Happiness Is Homemade Party

Happy November and the beginning of “standard time.”  Did you remember to “fall back” on Sunday?  Inevitably, some figure it out as everything seems to be just a little bit off and then the lightbulb turns on.  The time change sneaked up on them, again. Thanksgiving is a little over 2  weeks away.  Would you like some new dessert recipes to try out?  We decided that this week’s features will be all about desserts. After all, what is Thanksgiving without dessert on the menu?

Delicious Sugar Free Apple Crisp Recipe

Do you love apple crisp? Me, too! The tastes and smells of warm apple pie permeate the air. And don’t forget buttery sweet crunch on top. How perfect is that? You can’t get to the table fast enough! LOL Many of us, though, are cutting back on carbs and getting away from sugar. So, no more yummy desserts for us? Never! This apple crisp, lightly sweetened with Pyure Organic Sweetener (Non-GMO stevia/erythritol blend) tastes just like the classic version only it is glycemic-friendly. You have got to give it a try!

Delicious sugar free classic apple crisp recipe

Here is the very simple recipe:


Easy Sugar-Free Apple Crisp Recipe

Ingredients

2 large apples, peeled & sliced

1 cup dry old-fashioned oatmeal

1/2 cup almond flour

1 stick butter, cold

1/4 cup Pyure  sweetener

1 tsp cinnamon

Delicious sugar free dessert - classic apple crisp

Pyure sweetener for baking #ad

Directions

Peel and slice the apples. If you do not have 2 large, use 4-5 medium.

Sprinkle 1 tsp Pyure and a dash of cinnamon.

Toss with the apples.

Dump into a 13″ x 9″ baking dish.

Mix the oatmeal, almond flour, cinnamon and remaining Pyure sweetener in a bowl.

Cut in the butter until you have tiny pea-sized bits.

Sprinkle it over the apples by hand.

Bake on 350° for 50-60 minutes till lightly browned.

Serve with vanilla ice cream or whipped cream.*

Makes 4 servings.

*Tip: canned whipped cream or homemade with Pyure sweetener will keep the carbs down.

Pumpkin Raisin Walnut Bread – A Family Favorite!

Sweet bread has always been my weakness. Give me a freshly baked loaf and I can polish it off in no-time. There isn’t a banana nut bread or cranberry bread that is safe in my presence! LOL 

When my friend, Rebecca, brought a pumpkin raisin walnut bread to to share in the office, I thought I’d gone to “sweet bread heaven!” Never had I tasted such a wonderful bread.  She gave me the recipe and now I share it with you. 

Recipe for pumpkin raisin nut bread

This recipe can be made as one big loaf or as several mini-loaves. Enjoy a nice thick slice with a glass of milk or, my favorite, a hot cup of coffee! I like the mini-loaves. The smaller slices look so nice on a serving platter but, then again, who ever gets them to the platter? Tee hee hee.

Pumpkin Raisin Walnut Sweet Bread Recipe

Ingredients

1 cup brown sugar

1/2 cup white granulated sugar

1 cup pumpkin, cooked or canned

1/2 cup cooking oil

2 eggs, unbeaten

2 cups flour

1 tsp. baking soda

1/2 tsp. salt

1/2 tsp. nutmeg

1/2 tsp. cinnamon

1/4 tsp. ginger

1 cup raisins (or chocolate chips)

1/2 cup chopped walnuts

1/4 cup water

Directions

Preheat oven to 350°.
Combine dry ingredients and set aside.
Combine wet ingredients.
Gradually add dry ingredients, mixing thoroughly.
Stir in raisins and walnuts.
Blend in water.
Spoon into 1 greased loaf pan (large) or 3 small greased loaf pans.

Note: this recipe is very thick and a challenge to stir. Do not think that you’ve done something wrong.
If it’s tough to mix, you have made it right!

Bake at 350° for 65-75 minutes until done.
Turn onto rack to cool.

Easy Delicious Peach Pie Recipe

When I entertain family and friends I love to make desserts from scratch. This year I have been in the mood to make a yummy peach pie.
First,  made a sour cream peach pie. It tasted great but I wasn’t able to show you a picture of the final product because the filling ran. It wasn’t pretty enough. Our family definitely loved it – this I know, because there wasn’t even a morsel left. Someone must have licked the bottom of the pan when I wasn’t looking–that’s how good it was.
I also made a delicious peach cobbler that was so easy we are sure to have it again real soon!

In searching cookbooks for a different peach pie recipe, I found this easy delicious peach pie recipe with frozen peaches.  This is by far the best peach pie I have ever eaten and it is so easy to make. When you taste it, you will see what I mean. It tastes as if the peaches were just picked off the tree. A frozen peach recipe that tastes like fresh? A dessert lover’s dream come true!
So fastened on my apron and gave it another crack. This time I made a classic peach pie with tapioca, in hopes that I would get a great tasting, great LOOKING peach pie to photograph…and it worked! This pie tastes wonderful and it looks pretty, too! I started with the basic Pillsbury® recipe in my Pillsbury® cookbook with frozen peaches and made a couple of little tweaks.

Here it is:

Easy Peach Pie With Frozen Peaches Recipe 

Adapted from Pillsbury®
pie baking, peaches, easy desserts

Ingredients

7-8 cups frozen sliced peaches
1 ¼ cups sugar
¼ cup quick-cooking tapioca
¼ tsp. cornstarch
¼ tsp. ground cinnamon
1-2 T lemon juice* (optional)
1 box refrigerated pie crusts, softened as directed on box
½ teaspoon flour

Directions

Preheat oven to 425°F.
  • Thaw peaches (partially) according to package directions.
  • Combine peaches, sugar, tapioca, cornstarch, cinnamon and lemon juice* in a large mixing bowl. Let it sit for at least 15 minutes, gently stirring once in a while.
  • Unroll the first pie crust on a clean flat surface.
  • Dust both sides lightly with flour; place in ungreased 9-inch glass pie plate/pan, pressing it into place.
  • Spoon peach mixture into the crust-lined plate.
  • Press filling gently against sides and bottom.
  • Place the second crust on top and flute the edges.
  • Vent by cutting slits in several places.
  • Cover crust edge with strips of foil to prevent it from burning.
  • Bake 30 minutes.
  • Remove foil.
  • Bake 20 to 30 minutes more or until golden brown.
  • Cool at least 2 hours.
  • Serve.

Tip about the lemon juice*: the peaches seemed tart enough to me so I left the lemon juice out. (Plus many of the comments online supported that decision.) The pie tasted absolutely great without but, next time, I will include the lemon juice. It will be even MORE delicious with that little extra zing.
