Turkey Croquettes Recipe – Easy, Delicious “Left Overs” Meal!

Have you ever heard of chicken croquettes?  Well, croquettes can also be made with turkey.  In fact, during the holidays I often use the leftover turkey to make delicious turkey croquettes for a couple of meals. They are a family favorite! Here is how to make them – they are easy, peasy!

Easy Turkey Croquettes Recipe

Croquette Ingredients

3 T. butter, melted

1/4 cup all-purpose white flour

1/3 cup milk

1/3 cup chicken broth

1 tsp. lemon juice

1 tsp. dry onion flakes or grated onion

1/4 tsp. salt

dash paprika

dash nutmeg

1 1/2 cups finely diced  turkey

Additional Ingredients For Frying The Croquettes

*Note that there are more ingredients used in the process:  1 egg, water, fine bread crumbs. cooking oil for cooking them.

Directions

Starting with butter, combine all of the croquette ingredients, except for the turkey,  in a saucepan on low-medium heat.

Stir until it thickens and then add to the diced turkey.  Mix through.

Chill thoroughly in refrigerator.

Wet your hands and shape mixture into 8 balls (about 1/4 cup each)

Roll in 3/4 plain fine bread crumbs.

Gently shape balls into cones and dip in 1 beaten egg and 2 T. water.

Roll again in bread crumbs.

Fry in  hot cooking oil in a deep pan or deep skillet (to prevent splattering) for 2 – 3 minutes till golden brown. (Use a spoon to roll them over half way through and brown on the other side.)

Drain them on paper towel on a plate.

Serves 4.

If you are a pumpkin pie lover, you are really going to love this brown sugar pumpkin pie. It is amazing!
During the winter holidays, we really look forward to having homemade pumpkin pie for dessert. Well, a few years ago I decided to make a change and bake something new. I baked this homemade pumpkin pie made with light brown sugar. The brown sugar takes traditional pumpkin pie to a  whole new level!

This pumpkin pie recipe includes melted butter, heavy and sour cream plus brown sugar.  It doesn’t get any better than that!  This dessert recipe is a must-try, friends. It is a winner!

Brown Sugar Pumpkin Pie Recipe

Ingredients

2 tbsp salted butter, melted
 1 cup light brown sugar, lightly packed
1 can (15 oz.) pumpkin
3 large eggs
1 cup heavy cream
⅓ cup sour cream
1 tbsp. pumpkin pie spice
2 tsp. vanilla extract

Directions

Preheat oven to 425°
      • Melt butter.
      • Combine the melted butter, brown sugar, pumpkin.
      • Mix with an electric mixer on medium till smooth.
      • Add eggs, heavy cream, sour cream, pumpkin spice and vanilla.
      • Mix well.
      • Pour batter into prepared, uncooked pie shell.
      • Cover the top edges of the crust with strips of aluminum foil to keep them from getting too brown.
      • Remove those strips 10 minutes prior to removing the cooked pie from the oven.

Holiday Wreath Breakfast Kuchen

This holiday breakfast kuchen is so pretty on a holiday table. Easy to make. Enjoy the “oohs and ahs” when company comes!

Holiday wreath kuchen also known as a Swedish tea-ring.
This pastry makes a wonderful gift. Just double the recipe and you can get three nice sized rings out of it.

Holiday Wreath Breakfast Kuchen Recipe

Pastry Ingredients

1 pkg. dry yeast
1 1/4 cups water
1/4 cup and a “drop” sugar
4 1/2 cups flour
1 tsp. salt
2 cold sticks butter
2 eggs

Filling

ground cinnamon
sugar
chopped walnuts

Glaze

1 cup powdered (confectioners) sugar
1 T. butter, softened
milk to the desired consistency
Green and red Maraschino cherries, drained … or pecans... for decoration.

air insulated non stick cookie sheets
Nonstick air insulated cookie sheets  – easy to clean, too!

Directions

 In WARM BOWL dissolve 1 pkg yeast, ¼ c water, drop of sugar
SECOND BOWL: 3 cups flour, ¼ c. sugar, 1 tsp salt, 2 cold sticks margarine, cut in using a pastry blender or two knives.
ADD 2 beaten EGGS, 1 cup water and yeast mix. MIX. Add 1 ½ cup more flour. COVER and refrigerate at least 2 hours…to 3 days.
Using a rolling pin, ROLL FLAT on floured surface.
Sprinkle generously with cinnamon, sugar and chopped walnuts.
Roll into a tube and connect the open ends making a ring.
Set the ring of dough on greased cookie sheet*.
Cut slices 1 inch wide and ¾ way through.
Twist sections onto their side, forming a “wreath”
LET RISE 20 minutes.
Bake 375° degrees 25-30 minutes.
Drizzle with a powdered sugar glazed icing.
 *No need to grease if using an air insulated baking sheet.
