I fell in love with this recipe the first time I saw it on the Hellman’s® TV commercial. That sizzling golden chicken looked so good, I had to make it. I have made it many times since. It is that good!

For those watching carbs or aiming low on the Glycemic Index, this dish is a dream come true! As you can see, I opted for cauliflower and broccoli as side dishes. It tastes great with rice, as well.

4 boneless chicken breasts

1/2 cup  Hellman’s mayonnaise

1/4 cup grated Parmesan cheese

1 T. Italian seasoned bread crumbs

Preheat oven to 425°

Place chicken breasts on foil covered baking sheet.

Combine mayonnaise and Parmesan cheese and spoon onto each breast.

Sprinkle with the bread crumbs.

Bake 20 minutes until juices run clear.
