Shrimp Salad Divan is a simple, low-carb dish that can almost literally be “thrown together.” In fact, that’s what I did and now it is one of my favorite lunches.
The story behind this salad is that I had run out of lime. If there had been lime on hand, that would have been my dressing. Since it was not, I got creative. Mayonnaise, lemon juice and curry powder create the “divan” touch to this salad and it tastes so good! Crisp, tasty, low carb? Perfect!
Shrimp Salad Divan
8 jumbo shrimp (frozen) thawed and cut into pieces
1/2 cup real mayonnaise
1 T. lemon juice
Curry powder, to taste
Sea Salt, sprinkle
Chop lettuce and put on a plate.
Add grape tomatoes, sliced in half.
Thaw the shrimp, drain juice.
Pull off the tails and cut into bite-size pieces.
Place the shrimp on top of the salad.
Blend mayo and lemon juice.
Spoon on top of the salad.
Sprinkle with curry powder and sea salt.
