Texas Caviar Recipe #1 – No Greater Love
Starting to miss the lighter foods of summer? I just came across this recipe that I obtained from my daughter in law, Shauna. It tastes so good. Texas Caviar is perfect for summer picnics but can easily be served in the wintertime, as well. Very healthy ingredients, you’ll be so proud that you are eating well and loving it, too!
Texas Caviar Recipe #2
This version – and there are many in addition to the two featured here – combines a homemade dressing with the “dip” ingredients. Serve on pita chips or tortilla chips.
Dressing
1 cup olive oil
1/2 cup cider vinegar
1/2 cup sugar
Heat the dressing ingredients until sugar dissolves. Set aside to cool
Dip
1 can shoepeg corn
1 can black eyed peas
1 can black beans
chopped green and red peppers
chopped onion
chopped jalapenos
chopped tomato
chopped celery
Combine dip ingredients. Add cooled dressing. Gently mix through. Refrigerate until time to serve. Best served with pita chips or tortilla chips.
