Do you know that it is almost impossible to find a fresh baked bran muffin with raisins in my town? We used to be able to go right to the bakery in our local grocery store and buy them, fresh out of the oven. Then they were discontinued. Really? Well, I missed them so much that I searched for a recipe and found a great one. This recipe for bran muffins with raisins is simple to make, freezes (and thaws) perfectly and is just delicious!

Classic Bran Muffin With Raisins Recipe
Ingredients
2 large eggs
1 cup milk
½ cup cooking oil
3 T. honey
¾ cup brown sugar
½ tsp. vanilla extract
1 ½ cups wheat bran
1 ½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
½ tsp baking soda
1 ¼ cup raisins
Directions
Preheat oven 400°
Combine eggs, milk, cooking oil, honey, brown sugar and vanilla.
Blend well.
Add wheat bran and allow to sit for 10 minutes to soak up the liquid.
Add flour, baking powder, salt, backing soda and blend well.
Blend in raisins.
Spoon the batter into muffin tins lined with cupcake liners sprayed, first, with non-stick cooking spray.
Bake for 15-20 minutes or until a wooden toothpick inserted comes out clean.
