Ever had beans and greens? Well, if you have not, you’ve really been missing something! Beans and greens is packed full of nutrients, low calorie, high in fiber and delicious. This easy recipe can be made in less than 30 minutes. Serve it with a meal or freeze some for later.
Escarole and Beans
Ingredients
15 oz fresh chopped Escarole
1 T olive oil
½ – 1 tsp garlic powder
1/2 cup chicken broth
1 15 oz can cannellini beans, undrained
salt to taste
Directions
Boil and blanch 1 minute
Drain and press excess liquid out of it.
Heat oil and garlic on medium in a large skillet.
Add drained escarole, chicken broth and cannellini beans.
Simmer for 5 minutes.
Salt to taste.
Serves 4.
