Broccoli salad with bacon and raisins is my utmost favorite picnic food! If there is a pot luck supper or cookout and broccoli salad is on the table, you will find me right in front of the bowl grabbing a double-helping! One of the reasons for my unruly behavior is that I am “broccoli salad deprived.”
Why? Because my dear husband doesn’t like the sound of it, look of it, smell of it or taste of it. If I have it in the refrigerator, he complains. “Really? Doesn’t he understand that this broccoli salad is my FAVORITE?”
So, whenever there is a party coming up, I seize my opportunity! This is the dish I bring to pass. And I am not the only one who loves it. I make a big batch because, believe me, there will be nothing left. All gone! Everybody loved it.
There are several versions of this recipe online so I took my favorite parts of a few and put them together.
Here is my recipe:
Broccoli Salad Recipe with Bacon and Raisins
Ingredients
8 slices bacon, fried
6-8 cups raw broccoli, cut into small florets
1 small red onion, cut into small pieces
1 cup raisins
1 cup Colby Jack cheese, cut into small cubes
2 T sunflower seeds
1 cup mayonnaise
½ cup granulated sugar
2 T white vinegar
Directions
Rinse, dry and cut raw broccoli into bite size florets.
Cook bacon till crisp (oven fryingis quickest)
Drain bacon, cool and cut into small pieces.
Drain bacon, cool and cut into small pieces.
Add bacon, raisins, onion to the broccoli in a large mixing bowl.
Combine mayonnaise, sugar and vinegar in a smaller bowl.
Blend well.
Add the mayonnaise mixture to the broccoli mixture and toss.
Add cheese cubes and gently toss.
Transfer all of it to a clean serving bowl.
Sprinkle sunflower seeds on top.
Refrigerate at least 1 hour.
(Hide what you want to have for yourself in a smaller container in the back of the frig.)
Serves 8-12.
