So, using the principles I am learning from THM, I put together this cheesecake as an experiment. Could I come up with something that would be a lot like the New York Style cheesecake that I adore? I followed the guidelines for what is called an “S meal” on the plan. The recipe fits very well for pretty much any low carb plan. If you are a cheesecake lover, I think you will be very pleasantly surprised!
Finally, a low carb cheesecake that tastes really good and creamy … and you make it in a mug! #THM S
Whenever I want to lose weight, I gravitate to low-carb diets. They work best for me but, even so, I have had a tough time sticking with them. When I finally came across Trim Healthy Mama, I was amazed! There was actually a way to enjoy pretty much EVERY food (except refined sugar) and lose weight? I wanted to know more. As I started to try the recipes, I realized that they taste really good. That was a game-changer for me!
2 T cream cheese, softened
1 T sour cream
1/2 T. THM Baking Blend
1 packet Truvia natural sweetener
Vanilla Sweetleaf Sweet Drops liquid Stevia* – optional
Tiny sprinkle of fine Himalayan pink salt
1 T chopped walnuts – optional
1 “blop” aerisol whipped topping – optional
1 tsp. butter – to grease the mug
Grease a microwavable mug using butter.
Using a fork, blend all other ingredients together until smooth-ish –there will be some little lumps from the cream cheese.
Pour the batter into the mug
Microwave on high 30 seconds.
Add walnuts on top.
Microwave another 35 seconds.
Refrigerate till cool.
Top with whipped cream.
