For years I had actually been avoiding making this recipe. We love matzo stuffing with our holiday turkey and this recipe requires real bread stuffing. I didn’t want to give up the matzo stuffing so I pretended that the leftovers casserole recipe didn’t exist! It worked, for a while.

My hubby saw the television commercial one too many times and insisted that this was the year that we had to have this amazing cranberry turkey casserole, so I gave in and made it. I am so glad I did! It tastes just as delicious as it looks on TV and it is well-worth it for me to make some bread stuffing just for this recipe! (I am never giving up my matzo stuffing.) This casserole is now part of our annual family holiday tradition.

Here is how you make it:
Amazing Cranberry Turkey Leftovers Casserole
Ingredients
Turkey – 4 cups leftover cooked turkey cut in pieces
Stuffing – 4 cups leftover prepared cubed bread stuffing
Mashed Potatoes – 2 cups leftover prepared mashed potatoes
Whole Berry Cranberry Sauce — 1/4 cup
3/4 cup Hellman’s real mayonnaise
1 1/2 cups shredded mozzarella cheese
Directions
Preheat oven 375°
Spray 8 inch baking pan with nonstick cooking spray
Spread 2 cups stuffing in the pan.
Add all of the turkey pieces.
Mix 1/4 cup cranberry sauce with 1/4 cup mayonnaise and spread over the turkey layer.
Combine mashed potatoes, remaining mayonnaise and mozzarella cheese.
Spread the potato mixture on top of the cranberry layer.
Top with the remaining stuffing.
Bake for 40 minutes or until heated through.
Allow to stand for 10 minutes.
Serves 4-6.
In my opinion, it is unlikely that you will have ANY leftovers – it is that good!
