For years I had actually been avoiding making this recipe. We love matzo stuffing with our holiday turkey and this recipe requires real bread stuffing. I didn’t want to give up the matzo stuffing so I pretended that the leftovers casserole recipe didn’t exist! It worked, for a while.

My hubby saw the television commercial one too many times and insisted that this was the year that we had to have this amazing cranberry turkey casserole, so I gave in and made it.

 

I am so glad I did! It tastes just as delicious as it looks on TV and  it is well-worth it for me to make some bread stuffing just for this recipe! (I am never giving up my matzo stuffing.)   This casserole is now part of our annual family holiday tradition.

Here is how you make it:

 

Amazing Cranberry Turkey Leftovers Casserole


*Original recipe by Hellman’s

Ingredients
Turkey – 4 cups leftover cooked turkey cut in pieces
Stuffing – 4 cups leftover prepared cubed bread stuffing
Mashed Potatoes – 2 cups leftover prepared mashed potatoes
Whole Berry Cranberry Sauce — 1/4 cup
3/4 cup Hellman’s real mayonnaise
1 1/2 cups shredded mozzarella cheese

Directions
Preheat oven 375
°
Spray 8 inch baking pan with nonstick cooking spray
Spread 2 cups stuffing in the pan.
Add all of the turkey pieces.
Mix 1/4 cup cranberry sauce with 1/4 cup mayonnaise and spread over the turkey layer.
Combine mashed potatoes, remaining mayonnaise and mozzarella cheese.
Spread the potato mixture on top of the cranberry layer.
Top with the remaining stuffing.
Bake for 40 minutes or until heated through.
Allow to stand for 10 minutes.
Serves 4-6.

In my opinion, it is unlikely that you will have ANY leftovers – it is that good!

Not to change the subject but, I am going to just for a minute…

When it comes to keeping a clean kitchen and a clean home, pet owners have their own special frustration.  We LOVE our fur babies but, let’s face it, fur babies leave fur ALL OVER THE PLACE!

When we had our amazing yellow labs, I’d go to work feeling like I took part of them to work with me.  Their fur was all over my clothes.  I came to realize that depending on lint rollers was WAY TO FAR into the process.  I needed to get that fur up off the floor and furniture before it got onto my clothes.

Keep Your Guests Busy While Thanksgiving Dinner is Prepared

Holidays are always so hectic!  Whether you’re traveling to see family or you’re preparing dinner at home, it’s not easy to balance all of the responsibilities that the holidays entail.  It’s wonderful when family helps to cook Thanksgiving dinner, but there will always be those family members or kids who have nothing to do and are hungrily waiting for the grand feast.  Here are a few ideas that you can use to entertain your guests while they wait:
Cookie Decorations   Provide cookies, decorative icing, and sprinkles so that guests can make their own personalized cookies.  It’s a fun activity and can take

the edge off of hunger.  Kids will especially love this activity, and it will keep them busy for at least a little bit.  Make sugar cookies the day before so that setup is quick and easy on Thanksgiving Day.

Apple Dip   If you want something healthier, try offering an apple station with a variety of dips.  Offering several different dips will make this healthy snack more fun.  Set out washed apples and a kid-friendly apple slicer instead of slicing the apples ahead of time.  This will keep the apple slices from going brown and will free up some of your time.  Make the dips ahead of time to decrease stress on the day of.
Plate Crafts   Instead of just decorating food, kids could decorate paper plates.  Construction paper, crayons, colored pencils, and glue will help to keep kids busy.   Kids can decorate the plates with Thanksgiving-themed cutouts, and you can hang up the plates once the kids are done decorating. Use the undecorated plates for Thanksgiving dinner once it’s ready.  Try heavyduty paper plates to hold that amazing meal that you just made!  You could also use foamplates if you prefer.
