Here is how I got the recipe. One of the teachers at the school brought a batch of these yummy oatmeal fudge bars to work last month and put a big tray of them by the coffee pot in the teacher’s lounge. We all loved them so much that they were gone before lunchtime! I asked Joanna, the teacher who made them, for the recipe and here it is for you.

Easy Fudgy Oatmeal Chocolate Bar Recipe
Preheat oven to 350°
Grease a 9 x 13” baking pan
Note: an astute reader noticed that I used a smaller, square baking pan in the photo below. I had split the recipe into two pans to bring to school for a treat for our staff. Two 8X8 pans or one 9X13 works the same!
Ingredients
2 cups brown sugar
1 cup butter
2 eggs
1 tsp vanilla
2 ½ cups flour
1 tsp baking soda
3 cups old fashioned oatmeal
1 pkg chocolate chips [12 oz]
1 can sweetened condensed milk [14 oz]
1 tsp vanilla
2 T. butter

Directions
Combine everything EXCEPT the last four ingredients in a large mixing bowl.
Spoon ½ of the batter into a grease baking pan and press it in with the back of a big spoon.
Combine chocolate chips, sweetened condensed milk, vanilla and 2 T. butter.
Heat them in a microwavable bowl until melted.*
*Tip – about 30 seconds at a time.
Stir.
Spoon the melted chocolate chip batter onto the other in the pan.
Add the rest of the oatmeal batter to the top.
Bake at 350° for 25-30 minutes.
Run a sharp knife around the outer edge then cool completely.
Cut into squares about 1 – 2 inches.

They really are delicious. I have a friend that likes them a bit less chocolatey. She makes the recipe as-is and just uses less chocolate chips.

Awesome! The first time I made it I did it exactly as is. Next time I am going to use a little less of the chocolate mixture to allow the “blondie” part to be more prominent and see how it goes. It is such a versatile recipe!

I used Quick Oats, because that’s what I had. Turned out great, they are thick, chocolatey and dense. Yum! I lined pan with parchment so they were easy to remove and cut into bars.

Great question. Sorry that I failed to have those details on the recipe but I did add them moments ago. Chocolate chip 12 oz. and sweetened condensed milk 14 oz.

Directions say 9×13 pan, but the photo shows maybe 8×8. Which is right?
Both? Good catch on that photo. It has been a while since the photos were taken but I believe I split it into two pans to take to school for the teachers. Most of the time I would go with a 9X13 or 8X12 pan. Something on the bigger side. It will cut better if it is not overly thick. Thanks for asking!
