Easy Chili Recipe You Will Love!

Are you a chili lover? I am!  I love chili on hotdogs, chili on crisp green salads, chili as a dip with tortilla chips and, of course, hot chili in a great big bowl. Give me a spoon, some sour cream, melted cheese and salsa and I am a very happy girl. An added bonus is that this easy chili recipe is really simple to make. I like to cook up a BIG BATCH so that I can freeze some for another day.

Chili Salad Recipe – Best Leftovers Recipe Ever!

By Sinea Pies

Some of the best concoctions can be made from leftovers! This salad is one of them. I had made a great big pot of homemade chili and, the next day, wanted more. So, for lunch I made this luscious salad! It is oh so easy. Here is how I did it!

Mexican food, salad

Of course, it helps to have the chili on hand. You can use any chili but my recipe tastes really great. I always make more than needed so that we are guaranteed to have some leftovers plus I can freeze enough for a whole nuther meal (is “nuther” a word?)

Chili Salad Recipe
Ingredients
Prepared chili
Shredded cheddar cheese
Lettuce and/or other salad greens
Cocktail or Grape Tomatoes
Chopped green pepper
Optional Toppings:
Sour Cream
Salsa
Banana Pepper slices
Directions
Put some chili in a microwavable bowl. I used about 1 cup for this salad.
Sprinkle cheddar cheese on top.
Warm it until sizzling and cheese is melted.
While the chili is heating, cut up lettuce and put it in a salad bowl.
Add chopped green pepper and tomatoes.
Slide the warm chili on top of your salad.
Add optional toppings.
Serve!
