Classic Homemade Chicken Pot Pie

As the weather cools, people are ready for “comfort food,” am I right?   What exactly is comfort food? It encompasses the tummy-warming dishes that make you smile!  Awesome casseroles, homemade soups and, of course, homemade chicken pot pie are all in that group.
When I make homemade chicken pot pie, I serve it with creamy mashed potatoes on the side or fresh baked biscuits.

Classic Chicken Pot Pie Recipe

Ingredients
2 refrigerated prepared pie crusts (room temp)
1/3 cup butter
1/3 cup finely chopped onion
1/3 cup all-purpose flour
1/4 tsp salt
dash pepper
1 ¾ cups chicken broth
½ cup milk*
2 ½ – 3 cups cooked, diced chicken
2 cups frozen peas and carrots (thawed)
*For those who avoid lactose, this recipe works really well with lactose-free milk, instead!

Directions

Preheat oven to 425°
1. Precook chicken in a non-stick skillet and cut into small bite sized pieces.*
2. Melt butter in a sauce pan on medium heat.
3. Sprinkle in salt and pepper.
4. Add onion and sauté till soft, about 2 minutes.
4. Stir in flour.
5. Add chicken broth and milk, gradually while stirring. Stir until sauce thickens.
6-8. Mix in thawed peas and carrots and chicken.
9 & 11. Spoon filling into prepared pie dish with one uncooked pie crust in it.
10. Using a cookie cutter, cut out center of the other pie crust.
12. Put that crust on top of your pot pie and flute the edges.
BAKE for approximately 40 minutes on 425°**
Cool 10 minutes. Cut and serve.
Serves 6.

*Tip – leftover turkey can be used in place of chicken. 
**Tip – cover the edges of the pie with aluminum foil for the first 30 minutes to prevent burning. Remove and continue baking the final 10 minutes to a nice golden brown.

 

Now doesn’t this look great?  It tasted so good that we had it two nights in a row!

Easy Chili Recipe You Will Love!

Are you a chili lover? I am!  I love chili on hotdogs, chili on crisp green salads, chili as a dip with tortilla chips and, of course, hot chili in a great big bowl. Give me a spoon, some sour cream, melted cheese and salsa and I am a very happy girl. An added bonus is that this easy chili recipe is really simple to make. I like to cook up a BIG BATCH so that I can freeze some for another day.

 Easy Chili Recipe

Ingredients

3 T cooking oil

1 large chopped onion

1 large chopped green pepper

5 pounds 90% lean ground beef

2-3  16 oz. cans hot chili beans

2-3  16 oz. cans red kidney beans

1 large 28 oz. can crushed tomatoes

chili powder

salt

pepper

Directions

Heat a large pot on the stove, medium heat, with the oil in it.

Add green peppers and onions.

Stir till softened a little bit.

Add the raw ground beef.

Stir occasionally while browning it.

Season with chili powder, salt & pepper according to taste.

Add drained kidney beans, chili beans (WITH their sauce), crushed tomatoes.

Simmer.

Ladle off excess liquid as you go.

 

Serve with your favorite toppings: sour cream, grated cheddar cheese, salsa, banana peppers, tortilla chips and more!

Don’t you just love beef stew? Beef stew, to me, is comfort food. You know, that tummy-warming, creamy, great tasting food served in one dish. Eating comfort food is like getting a hug on the inside.  This delicious slow cooker beef stew recipe is so easy to make. You will want to make it over and over again!

When you think of comfort food, what comes to mind? I think of macaroni & cheese, tuna noodle casserole, spaghetti & meatballs and this family favorite: beef stew! Beef stew goes with hot biscuits, don’t you think? When I serve it, a basket of hot biscuits is always on the table, right by its side.

Not only is beef stew a perfect dinner on a cold winter’s night, it is now easier than ever to make. Just pull out your slow cooker and you are ready to go! I used to avoid using a crockpot. The clean up was a mess. As it is, mine is very large and heavy. Baked on food? Yikes! A nightmare to clean up. I hated it. Then my son (yes, my 25 year old son) told me about slow cooker liners and it opened up a whole new world for me. Cleaning is a breeze. What a relief.

Slow Cooker Beef Stew Recipe

Large Slow Cooker/Crockpot

Slow Cooker Liner

Ingredients

4-5 pounds of cut and trimmed stewing beef

1 T. dried onion flakes

4 large baking potatoes, peeled and cut in 2” cubes

2 cups large baby carrots

1/2 to 1 cup frozen peas

2-3 cans of Cream of Mushroom Soup [undiluted]

1 T. Knorr brown gravy mix

Directions

  • Line your crockpot and set it on HIGH heat.
  • Pre-cook the stew beef in a non-stick skillet.
  • Peel and cut your potatoes into cubes. Place them on one side of the cooker.
  • Add the carrots to the other side.
  • Place the stew beef on top of the veggies.
  • Add Cream of Mushroom soup The juices from the beef should dilute it enough to make it just the right consistency. Start with 2 cans. If it there is not enough gravy or it is too thin, add the third can.
  • Sprinkle 1 T. dry Knorr brown gravy mix and mix it through for flavoring.
  • Cover it with the lid and cook on high for 4-6 hours.
  • Check the veggies. You want them to be softly tender but not mushy. 
  • Add the frozen peas and mix through. They will thaw quickly and be just right without precooking.
  • Ready to serve in 5 minutes.

One day I was leafing through an old Taste Of Home magazine.  This issue was featuring the winners from their recipe contest. The winning recipe by Patricia Lavell was spaghetti pie casserole. It looked delicious! I didn’t have the exact ingredients on hand so I made a couple of adjustments. I used less green pepper and, instead of fresh garlic cloves, I used garlic powder.

Spaghetti Pie Casserole Recipe

Ingredients

8 oz. dry spaghetti
1 1/2 lbs ground beef
 1/4 tsp dry onion flakes
1/4 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
12 oz spaghetti sauce
4 oz cream cheese
1 cup sour cream
1 tsp finely chopped green onion
                                        1 cup shredded cheddar cheese                                             1/2 cup shredded mozzarella cheese


Directions

Cook spaghetti per package directions.
Drain.
Cook ground beef in a non-stick skillet, breaking it into crumbles, till done.
Drain the fat.
Sprinkle the cooked meat with garlic powder, salt, pepper and dry onion flakes
Mix through.
Add spaghetti sauce and simmer for 20 minutes
Spray 11 X 7 baking dish with non-stick spray.
Pour the cooked, drained spaghetti into the casserole dish and spread out evenly.
Layer with cream cheese / sour cream mixture.
Add the meat for a third layer.
Sprinkle the top with the cheeses.
Cover the pan and bake 25 minutes on 350° degrees
Uncover and bake another 5-10 minutes till bubbly.
Makes 4 – 8 servings.

Easy and Delicious Homemade Cheesy Broccoli Soup

Don’t you just love tummy-warming comfort food on a cold winter’s night? Me too! This cheesy broccoli soup is that kind of dish. Easy fixing and tummy-loving!

Some folks in my family would have had to say “no thank you” to  a creamy dairy-based dish like this. Oh, they would have loved the taste but suffered for it later. Not the case, now. Let me give you the recipe for this yummy soup and tell you just how everyone can eat it trouble-free!

 Cheese Broccoli Soup

Ingredients
2 T salted butter
¼ cup onion, finely chopped
2 T all purpose flour
1 ½  cups Lactaid® whole milk
1 cup chicken broth
¾ lb (12 oz) processed cheese, cut in cubes
10 oz. pkg frozen broccoli cuts, thawed and drained
Dash of ground pepper
Dash of salt
Lactaid milk, soup recipes
Directions
Place butter in a sauce pan heated to medium heat.
Add onion.
Sautee for 2 minutes
Add flour and pepper
Whisk into a paste.
Gradually add Lactaid® milk and chicken broth, stirring to keep it smooth.
Bring to a boil for about 1 minute.
Reduce heat to medium high.
Add cheese cubes and broccoli pieces.
Gently stir in and allow to simmer for 5 minutes.
Tip: if it is thicker than you’d like, add a little more chicken broth.
Serves 2-4

Lima Beans and Pork

Lima beans are legumes. Legumes are, primarily, beans. That would include black beans, kidney beans, lentils and lima beans. Now this may surprise you:  peas and peanuts are legumes, too! Lima beans make the creamiest “warm your tummy” comfort food – you just have to try this!

Lima beans have a subtle buttery flavor that makes a nice compliment to a meal. I, however, love my lima beans as the meal! My mom introduced me to lima beans and pork when I was just a child and they have been a favorite ever since.

Vinegar is the perfect condiment for this dish. Creamy lima beans, small pieces of pork and vinegar. Love it!

Did I lose you?

If you enjoy vinegar in other dishes – like tossed salad – then you MUST give this dish a try.
It is inexpensive and nutritious*.
Lima beans and pork is easy to make.
It stores well and can be frozen for future use.
It may just be PERFECT but if you don’t try it you will never know 🙂

Lima Beans and Pork Recipe

Ingredients
1 16 oz. bag of large dry lima beans
1 large cooking onion
Salt
Pepper
Garlic Powder
Pork – cooked and cut up

Directions

  • Place the dry beans in a large saucepan and fill it with cold water covering the beans completely.
  • Allow the beans to sit overnight. They will soak up a lot of the water and swell in size.
  • Drain and rinse them well.
  • Refill the pot of beans with fresh water covering them completely and “then some.”
  • Add a coarsely chopped onion.
  • Bring to a boil.
  • Turn the heat down so that a very soft boil is maintained. Boil for 30-60 minutes, stirring occasionally, till there is a creamy sauce and the beans are soft.
  • Season with salt, pepper and garlic powder to taste.
  • Add cut up cooked pork or ham.
  • Serve in a bowl with cider vinegar as a condiment.
One 16 oz bag of large, dry lima beans can feed 4-8 people.

This recipe freezes well. Just cool it and spoon it into a freezer container.  I recommend separating the recipe into more than one container so that you don’t have to thaw a large amount unless you know you will be using it all at one time.

Tip: I did not have cooked pork on hand so I took a package of fresh thin-sliced boneless pork chops, seasoned and fried them in a skillet. Then I cut up half of the pork to add to my lima beans for flavoring and ate the remainder for a delicious pork and broccoli lunch. The lima beans were our dinner!
