Homemade on a Weeknight is kicking this week off. Sometimes you just want a good ole chicken taco – and sometimes you want to make take taco night on an adventure and combine it with some bacon and elote style corn. And that is how these Elote Crispy Chicken Tacos came to be. With super simple ingredients and a little bit of time, you can make these flavor packed soft tacos any day of the week.

Cookie Cutter Cookies – Easy Recipe

Rolled Sugar Cookie Recipe

Ingredients

1 1/2 cups butter [softened]

2 cups granulated sugar

4 large eggs

1 tsp. vanilla extract

5 cups all-purpose flour

2 tsp. baking powder

1 tsp. salt

Gold & White edible sprinkles for baking.

Directions

Preheat oven to 400° F.

Cream together sugar and butter, in a large bowl.

Beat in eggs and vanilla extract.

Stir in flour, baking powder and salt.

Cover the bowl with plastic wrap and refrigerate one hour or more [even overnight.]

Flour your work surface.
Cut the dough in half or thirds.

Roll out a piece of dough using a rolling pin, making the dough ¼ to ½ inch thick.
Tip: Keep counters clean – easy cleanup – with silicon baking mats.

Cut shapes out of the dough using cookie cutters.

Bake them on an ungreased cookie sheet, 1 inch apart, for 6 – 8 minutes until lightly golden brown on the edges. Do not over-bake.
Tip: I tend to burn cookies so I use Air-Bake Natural Cookie Sheets.
Perfect every time!

Best Ever Peanut Butter Cookie Recipe

Two key elements to follow that make these peanut butter cookies spectacular:

SOFTEN: Allow enough time to leave your butter and egg out on the counter to come to room temperature. That is all the softening your butter needs. Do not melt or soften in the microwave, it will affect your results.
CHILL: Chill the dough for at least 2-3 hours in the refrigerator before making the cookies. That’s it!

Perfect Peanut Butter Cookies

Makes approximately 20 cookies

Instructions

1/2 cup salted butter, room temperature

1/2 cup granulated sugar

1/2 cup brown sugar (packed)

1/2 cup peanut butter

1 tsp vanilla

1 large egg, room temperature

1 1/2 cups + 1 T. flour

1/2 tsp baking powder

1/2 tsp baking soda

Directions

Preheat oven to 350º

Cream together sugars (granulated and brown) with butter, using an electric hand mixer.
Add the egg and beat for 1 minute.
Add vanilla and peanut butter, continue beating on high till smooth.
Set aside.

Combine flour, baking powder and baking soda.
Mix through with a fork.
Add the dry mixture to the wet mixture and gently beat until it is a nice thick dough.
Chill dough in refrigerator for 2-3 hours.

Form balls out of the chilled dough about 1 1/2 to 2 inches in diameter
-about a heaping tablespoon of dough.

Pour granulated sugar into a small bowl or onto a plate.
Roll each ball in the sugar.
Place them on an ungreased cookie sheet about 2 inches apart.
Make “grid” on top of each cookie by pressing a fork across the top one way and then another.
Bake for 10-12 minutes.
Remove from oven and allow to sit for 5 minutes before moving them to a plate or a wire cooling rack to cool the rest of the way.

*Lining your cookie sheet with parchment paper before baking instead of using a plain ungreased baking sheet also works well.
