Is there something wrong with me? Tell me that I’m not alone in this. For years I have made macaroni salad and, thinking it was so easy –“who needs a recipe?”– I faked my way through. Each time it only tasted OK. So, then I bought prepared macaroni salads from local delis thinking they would taste better and, guess what? Each store-bought macaroni salad only tasted OK, as well. Now, I was frustrated. My hubby loves mac salad and whenever we have a cookout he asks me to put it on the menu.
So, finally I relented and found a recipe. Easy? Yes, it is easy to make. Difference from when I was wingin’ it is that the recipe is right! No more faking my way through. From now on I will be using this recipe. It tastes great.
Classic Macaroni Salad Recipe
Adapted from Hellmann’s
INGREDIENTS
8 ounces elbow macaroni (about 1-3/4 cups)
1 cup real mayonnaise (not salad dressing)
2 Tbsp. vinegar
1 Tbsp. brown or Dijon mustard
1 tsp. sugar
1 tsp. salt
1/4 tsp. ground black pepper
1 cup thinly sliced or chopped celery
1/4 cup chopped onion*
1 cup coarsely chopped green pepper* (optional)
1-3 hard boiled eggs, coarsely chopped* (optional)
DIRECTIONS
Cook macaroni according to package directions
Drain and rinse with cold water until completely cool.
Combine mayonnaise, vinegar, mustard,
sugar, salt and pepper in large bowl.
Stir in macaroni, celery and onion.
Serve chilled.
*ONION: I reduced the amount of onion greatly for my hubby’s sake. He doesn’t like to taste that the onion is in there. If I were making it just for me, I would stick with this recipe.
