Velvety Chocolate Cupcakes
Instructions for making this as a layer cake: CHOCOLATE LAYER CAKE
Ingredients
1 box chocolate cake mix
1 box [4 oz.] instant chocolate pudding mix
1 cup sour cream
1/2 cup water
1/2 cup canola oil
4 eggs
Garnish: chopped nuts, chocolate chips or sprinkles
Directions
Preheat oven to 350°
Using 2 12-cupcake pans or one 24-cupcake pan, place cupcake liners in each hole.
Variation: use brewed coffee (cold) instead of water
Combine all ingredients: cake mix, pudding mix, sour cream, water, oil and eggs in a large mixing bowl.
Mix for about 1 minute.
Scrape down the sides of the bowl and resume mixing for another 2-3 minutes on LOW speed.
Spoon batter into each cupcake tin – it will be thick.
Bake for 18-22 minutes.
Remove from oven and cool.
Frost with chocolate frosting and decorate.
I used chocolate buttercream frosting and garnished them with walnuts, chocolate chips or colored sprinkles.
Enjoy!
