Looking for a little variety with your family breakfasts? Try adding a little cinnamon and walnuts to your pancakes. This variation provides for making it more than one way!
I was making classic baking mix pancakes for breakfast this week and wanted to try something new. After making them for family members who didn’t want to get adventurous, I sprinkled cinnamon on the uncooked side of my own pancakes in the skillet and added some chopped walnuts. Wow! They tasted great. What a fun change of pace.
Here is the simple recipe:
Ingredients
1 cup dry baking mix*
1 egg
1/2 cup milk
1 tsp cinnamon
1 T chopped walnuts
3 whole shelled walnuts
pat of butter
maple syrup
Directions
Warm a non-stick skillet on medium heat.
Spray lightly with pan spray or melt a little butter in it.
Mix baking mix (the kind that requires ingredients other than water), egg and milk to make a batter.
Pour batter into warmed skillet to form a pancake.
Sprinkle cinnamon lightly across the wet side of the pancake before turning.
Drop chopped walnuts onto the pancake as well.
When you see bubbles forming on top of the pancake and a couple of them have burst, turn the pancake.
Cook another minute or two.
Remove.
Serve on plate with a pat of butter on top plus whole walnuts and maple syrup.
