At some point in my childhood my mom got tired of making the same old meals. To fight the boredom, she entered the craze of stir fry cooking using a wok.
It didn’t work as well as she had hoped since we had an electric stove and proper wok-cooking requires a real flame. However, she did find this easy recipe which has stayed in the family for years. This stir fry chicken is so simple to make right in a non-stick skillet. It is usually served on rice but it also tastes very good on crunchy Chinese noodles.
Stir Fry Chicken and Mushrooms

- Boneless skinless chicken breasts (1 lb)
- ½ lb. fresh mushrooms
- 1 T cornstarch
- 2 T water
- 1 T sherry
- 1 tsp. salt
- 2 T soy sauce
- 3+ T cooking oil
- 1 scallion or 1 small sweet onion
- 1-2 dashes ground ginger

Directions
Add chicken mixture.
Stir constantly for 2 minutes and then add mushrooms back in.
Cook together for 30 seconds, or until chicken is done.
For a family of four, I recommend tripling this recipe.
