Stir Fry Chicken & Mushrooms – Easy Recipe!

Stir fry Chinese chicken with mushrooms is a simple, savory stir fry recipe that the whole family will love!

At some point in my childhood my mom got tired of making the same old meals. To fight the boredom,  she entered the craze of stir fry cooking using a wok.

It didn’t work as well as she had hoped since we had an electric stove and proper wok-cooking requires a real flame. However, she did find this easy recipe which has stayed in the family for years. This stir fry chicken is so simple to make right in a non-stick skillet. It is usually served on rice but it also tastes very good on crunchy Chinese noodles.

Stir Fry Chicken and Mushrooms

“Chinese Chicken”

Ingredients

          • Boneless skinless chicken breasts (1 lb)
          • ½ lb. fresh mushrooms
          • 1 T cornstarch
          • 2 T water
          • 1 T cooking sherry
          • 1 tsp. salt
          • 2 T soy sauce
          • 3+ T cooking oil
          • 1 scallion or 1 small sweet onion
          • 1-2 dashes ground ginger

Directions

Cut chicken into small, bite size pieces.
Mix w cornstarch, water, sherry salt chopped scallion and ginger.
Rinse mushrooms. Cut them vertically into slices. Heat 1+ T. oil in skillet on medium-high heat, add mushrooms and soy sauce. Stir fry for 2 minutes. Remove.
Heat the other 2 T. of oil in skillet.
Add chicken mixture.
Stir constantly for 2 minutes and then add mushrooms back in.
Cook together for 30 seconds, or until chicken is done.

For  a family of four, I recommend tripling this recipe.

Easy Pulled Chicken 2-Ingredient Recipe

My dad lives in an upscale nursing facility that really knows how to deliver for its residents – especially when it comes to food and hospitality. Last week, when I stopped by to visit him, the scent of yummy barbecue filled the air. They had a whole buffet set up with several barbecue dishes and sides. Barbecued ribs were the hallmark but what caught my  attention was the pulled chicken! I wanted to stay to have some but I could not. So, I opted for second-best. I bought the ingredients to make pulled chicken at home!

These days cooking needs to be easy for me. Oh, I can tackle the fancy stuff with success but I am so busy. I do other things while I cook so “E-Z” is perfect for me!

 

Preparation phase:  this morning while planning a preschool lesson, I baked a tray of chicken thighs. Chicken thighs have a lot of grease so I baked them for an hour on 400°, drained the fat, returned it to the oven, turned down to 350° for another 30 minutes.

 

After the chicken had cooled enough to handle, I pulled off the skin …ate one thigh for lunch, yum!, pulled the chicken by hand into a saucepan and popped it in the frig for later.

Got a dog? Here is a safety warning from experience. When discarding the bones, wrap them up in the foil from your pan and throw them into a garbage bag. Put them in your garbage can outside the house. Chicken bones are VERY VERY dangerous for dogs but they love them. NEVER give a chicken bone to a dog. My lab, who never raided the garbage, got some chicken bones and it nearly killed her. She was so so so sick for 2 weeks. If you have a dog, get those bones away from even the possibility that your furry little love can get ’em.

Off to visit dad…
I’m back from visiting my dad. Part 2  is to blend in some barbecue sauce and simmer on the stove while I cook up some rice. Many people love to eat their pulled chicken or pulled pork, on a roll. We do, too, but we’ve been having a lot of sandwiches lately. This tastes great on a bed of rice.

 

So, here is the simple recipe for you …and don’t hesitate to
serve it on a bun if that’s the way you like it!

Easy Pulled Chicken Recipe

Ingredients
Serves 2-4 people

6-8 chicken thighs
1/2 – 3/4 cup barbecue sauce
Rice

Directions

Cover a baking pan with foil.
Bake chicken thighs at  400° for one hour.
Drain the fat and return the chicken to the oven.
Lower the temperature to 350° for another 30 minutes.
Remove from the oven and cool until the chicken can be easily handled.
Wash your hands and then remove the skin from the thighs.
Pull the chicken from the bones and place in a saucepan.
Add the barbecue sauce and heat it in the pan on medium heat.
I used Sweet Baby Ray’s Sweet ‘n Spicy flavor. Tasted great. 
Make rice according to directions.
Serve with the hot pulled chicken on top.
