Chicken Guacamole Roll Ups Recipe

This easy to make roll up is low-carb and ultra THM-S friendly! I often have it for a snack or light lunch. It is delicious!
Trim Healthy Mama, S meal, low glycemic
I just love eating now that I found Trim Healthy Mama. Very low-carb friendly, this healthy eating plan also allows for good carbs. I can even have fruit! So far, I have lost 11 pounds in 7 months with LOTS of interruptions (Details in my “crisis post“) It may sound slow but I have actually lost 75% of the weight I set out to lose. Best news, besides the variety, is the sustainabililty. I know I can do this forever and be very happy, trim and healthy!
So, I came up with this light lunch / snack idea and love it so much that I make a point of having all of the ingredients in the house.  That way I can throw it together anytime.

Wanted share it with you …

Gooey Chocolate Lava Cake in a Mug

Is it cake? Is it pudding? Gooey Chocolate Lava Cake in a mug is the most decadent chocolaty dessert anybody ever ate and still lost weight – yes, it is low-carb!
Chocolate lava cake in a mug is a great low-carb dessert #recipes
Low carb eating agrees with me. I love the food. I always feel better. When I follow a low-carb regimen I have more energy and lose weight, too. So why has it been such a struggle to stick with? Well, frankly, I missed carbs. And I especially missed yummy desserts!

Now that I have discovered Trim Healthy Mama, problem solved! The plan allows me to include healthy carbs while following a significantly low-carb strategy. Best part?  I get to have awesome desserts, too.

As a rank beginner, I first came up with my Dreamy Creamy Cheesecake You Will Love… in a Mug. What a great dessert! It truly is a low-carb dream come true. I continue to enjoy it over and over again.

My most recent obsession is a chocolate lover’s dream ⇒ Gooey Chocolate Lava Cake in a Mug! And, I am losing weight. 8.5 pounds in 4 months. Oh, others have lost faster but my goal is to get to the finish line and stay there – not necessarily set a record for speed!

This chocolate mug cake recipe can be enjoyed on pretty much any low-carb plan. Read the labels on the ingredients and you will see that it is true. The THM philosophy is desserts don’t have to be tacked onto the end of a meal. Instead, have it as a meal! Cake for breakfast? Sure! No wonder I love THM!

I came up with the recipe from their Volcano Lava Mudslide Muffin. I didn’t have all the ingredients in the house – and I was desperate for chocolate! So, I used what I had and “Voila” – my lava cake in a mug was born.

THM-S, low carb, Atkins, Southbeach, weight loss, low carbohydrate cooking
It is a mystery to me why I stray from low carb eating. I always lose weight. I always feel better – and I love the food!  Now that I have found THM [Trim Healthy Mama] and CAN have “carbalicious” delicacies, I am back in the groove and returning to my favorites. Stir fry zucchini with tofu is one of them.
I usually have this dish for lunch, though it can be a side or even breakfast. It is so easy to make and so tasty. Surely you don’t have to be on a diet to enjoy it but it is nice to know that it is very friendly to any low-carb plan.

Here is how to make it:

Quick Low Carb Tofu Zucchini Stir Fry Recipe

Ingredients

2 T. olive oil
1/4 brick extra firm tofu
1/2 cup zucchini squash cut in bite sized pieces
Garlic powder to taste
Himalayan Pink salt – a sprinkle
1/4 – 1/3 cup shredded mozzarella cheese

Directions

Heat oil in non-stick skillet on medium-high.
Drain the water from the tofu.*
Slice 1/4 off the brick of tofu.
*Return the larger part to a plastic container filled with fresh water. Seal and refrigerate for future use.
Press with clean paper towel to get the excess water out.
Cut the tofu in bite-size squares.
Add to the skillet.
Sprinkle with garlic powder and salt.
Toss gently using a spatula.
Add zucchini pieces and continue to lightly turn it so that it doesn’t stick.
When tofu is slightly golden and zucchini softened a bit, top with mozzarella till it melts.
Slide it out of the skillet onto a plate and dig in!

How To Make Pesto Eggs the Easy Way!

Looking for a little variety for breakfast? Make pesto eggs!
Trim Healthy Mama, low carb diets, THM, eggs, healthy eating
This recipe is an adaptation of a mint pesto egg recipe featured in Good Housekeeping Magazine this month. They have quite a collection of delightful egg recipes in there. This one looked especially good but I am not a “mint person.” So, I used classic pesto instead and does it taste delicious.
As someone who loves “quick ‘n easy,” I purchased a dab of prepared pesto at my grocery store for .45 cents, instead of making it.  Only .45 cents?  I didn’t need much! The store has a luscious Mediterranean olive bar with a variety of selections including PESTO! If you prefer making your own, or don’t have a source nearby to get it, here is a recipe: Classic Pesto Recipe

Easy shrimp salad recipe! #lowcarbdiet #lowcarb #recipes #salads #shrimp Ducks 'n a Row

Ever get bored with your food? I did. Oh, I love my low carb diet. I feel better eating this way. I’m losing weight, too. And I really love the food…but I lacked imagination. Same old, same old.

Lunchtime had arrived and I was out of ideas. I thought about making a yummy chicken walnut salad,  but then I remembered I had some frozen shrimp in the freezer. Yipee, something new! This simple shrimp salad tasted absolutely delicious.  I prettied things up a bit by serving it on some lettuce leaves, with avocado slices on the side. Another simple solution for everyday problems. I was one happy lady! If you like shrimp, you’ve got to try this.

Shrimp Salad Recipe

1 cup cut up jumbo or medium shrimp
1/8 cup mayonnaise
1/4 tsp grated onion (optional)
2 T finely chopped celery
1 tsp Lemon juice
Sliced avocado (optional)

Lettuce leaves (optional)

  • Place the frozen shrimp in a bowl of very warm water till it thaws, about 10 minutes.
  • Rinse in cold water.
  • Pull off the tails, discarding them.
  • Pat the shrimp dry with a paper towel.
  • Snip the shrimp into bite-sized pieces, using cooking scissors.
  • Combine with mayonnaise, celery, onion and lemon juice.
Serve on lettuce. Enjoy!
