Quick Low Carb Tofu Zucchini Stir Fry Recipe

It is a mystery to me why I stray from low carb eating. I always lose weight. I always feel better – and I love the food!  Now that I have found THM [Trim Healthy Mama] and CAN have “carbalicious” delicacies, I am back in the groove and returning to my favorites. Stir fry zucchini with tofu is one of them.
I usually have this dish for lunch, though it can be a side or even breakfast. It is so easy to make and so tasty. Surely you don’t have to be on a diet to enjoy it but it is nice to know that it is very friendly to any low-carb plan.

Here is how to make it:

Quick Low Carb Tofu Zucchini Stir Fry Recipe

Ingredients

2 T. olive oil
1/4 brick extra firm tofu
1/2 cup zucchini squash cut in bite sized pieces
Garlic powder to taste
Himalayan Pink salt – a sprinkle
1/4 – 1/3 cup shredded mozzarella cheese

Directions

Heat oil in non-stick skillet on medium-high.
Drain the water from the tofu.*
Slice 1/4 off the brick of tofu.
*Return the larger part to a plastic container filled with fresh water. Seal and refrigerate for future use.
Press with clean paper towel to get the excess water out.
Cut the tofu in bite-size squares.
Add to the skillet.
Sprinkle with garlic powder and salt.
Toss gently using a spatula.
Add zucchini pieces and continue to lightly turn it so that it doesn’t stick.
When tofu is slightly golden and zucchini softened a bit, top with mozzarella till it melts.
Slide it out of the skillet onto a plate and dig in!

How To Make Pesto Eggs the Easy Way!

This recipe is an adaptation of a mint pesto egg recipe featured in Good Housekeeping Magazine this month. They have quite a collection of delightful egg recipes in there. This one looked especially good but I am not a “mint person.” So, I used classic pesto instead and does it taste delicious.
As someone who loves “quick ‘n easy,” I purchased a dab of prepared pesto at my grocery store for .45 cents, instead of making it.  Only .45 cents?  I didn’t need much! The store has a luscious Mediterranean olive bar with a variety of selections including PESTO! So, here is how to make Pesto Eggs, the easy way:

Pesto Eggs Recipe

Ingredients
1 tsp. Classic Pesto
1 T. Heavy Cream
1 Large Egg
4 oz porcelain ramekins
Set of 6 porcelain 4 oz. ramekin bowls – oven safe for baking!  #AD
 
Directions
Preheat oven to 425°
Grease the interior of a 1/2 cup sized Ramekin (I used butter)
Pour in 1 T. heavy cream
Add 1 large egg
Dollop 1 tsp. pesto on top
Place Ramekin on baking sheet
Bake at 425° for 12-16 minutes till white is set and yellow is still runny.
Serves 1
Double, triple or whatever for more servings. Just line up the Ramekins on the baking sheet and bake together.
This recipe is extremely low-carb and works well with any number of low-carb diets including as an S meal for THM (Trim Healthy Mama)

Bacon Blue Cheese Salad Dressing Recipe

Ingredients

1/3 cup blue cheese salad dressing
1/3 cup sour cream
1T real mayonnaise
2 T bacon fat
Wooden salad bowl - best seller! Makes great gift #affiliate

Directions

Pre-cook 4 strips of bacon.*
Drain the fat into a little bowl.
Mix blue cheese dressing, sour cream, mayo in a bowl.
Measure 2 T bacon fat and add to the mixture.
Blend and spoon generously onto your salad.
-Serves 2-
*I use the oven fry method for cooking my bacon. Just set a timer so you don’t forget it is in the oven.

** This is the yummy salad dressing that I use on my Low Carb Steak Salad.

Ever get bored with your food? I did. Oh, I love my low carb diet. I feel better eating this way. I’m losing weight, too. And I really love the food…but I lacked imagination. Same old, same old.

Lunchtime had arrived and I was out of ideas. I thought about making a yummy chicken walnut salad,  but then I remembered I had some frozen shrimp in the freezer. Yipee, something new! This simple shrimp salad tasted absolutely delicious.  I prettied things up a bit by serving it on some lettuce leaves, with avocado slices on the side. Another simple solution for everyday problems. I was one happy lady! If you like shrimp, you’ve got to try this.

Shrimp Salad Recipe

1 cup cut up jumbo or medium shrimp
1/8 cup mayonnaise
1/4 tsp grated onion (optional)
2 T finely chopped celery
1 tsp Lemon juice
Sliced avocado (optional)

Lettuce leaves (optional)

  • Place the frozen shrimp in a bowl of very warm water till it thaws, about 10 minutes.
  • Rinse in cold water.
  • Pull off the tails, discarding them.
  • Pat the shrimp dry with a paper towel.
  • Snip the shrimp into bite-sized pieces, using cooking scissors.
  • Combine with mayonnaise, celery, onion and lemon juice.
Serve on lettuce. Enjoy!
