Here Is The Awesome Cheese Spread Recipe I Received As A Gift

This cheese spread recipe first came to me as a gift. Not the recipe – the cheese spread. It was Christmastime and I was working as a high school guidance counselor.

One of the parents gave me a batch of this delicious spread in a pretty container as a holiday gift. She told me that she had to make huge quantities in her household as the family would devour it so quickly. With a laugh, she said that they’d just walk by the refrigerator with spoon in hand and dig in. Forget the crackers!

Well, soon as I tried it I was on the phone asking her for the recipe. It is amazingly simple to make and its popularity is proven. I would triple this recipe if I were you!

 

Cheese Spread Recipe

Ingredients

8 oz. colby jack cheese – shredded

8 oz cheddar cheese – shredded

1 dash Red Hot Sauce

1/2 T. onion powder*

1 tsp. garlic powder

2 tsp. prepared mustard

1 tsp. Worcestershire sauce

1 1/3 cups real mayonnaise

Tip: you can substitute dry onion flakes for onion powder, if you prefer.

Directions

Combine all ingredients except for the cheese first.

Mix well with a spoon.

Add cheese and mix thoroughly.

Scoop into a covered container and refrigerate.

Tip: the flavor enhances over time. If you can keep everyone away for 12 hours or more, it will taste even better but good luck with that! LOL

Note: for those who are on a low-carb diet, this is perfect for you! Less than 1 carbohydrate per serving. How much is a serving? Your guess is good as mine. LOL Just watch the carbs in whatever you choose to put it on!

Do you enjoy finding a recipe that is “all that?” Well, now you have found one. This recipe is my most recent achievement destined for the “Great Snack Hall Of Fame”  – a nut covered curry cream cheese ball topped with  Strawberry Jalapeno Fruit Jam – guaranteed to disappear before the party is through. The tangy sweet n spicy flavor of this new spread is the secret to my recipe’s success. I teamed it up with a multigrain crispbread. The perfect combination!

Curry Cream Cheese Ball Recipe

[with strawberry jalapeno jam topping]
Ingredients

16 oz. cream cheese / softened to room temperature
1 tsp curry powder
2 T mayonnaise
1/8 tsp garlic powder
1/16 tsp (a smidge) of coarse sea salt
1/2 cup chopped walnuts
Topping: Strawberry Jalapeno Jam
Spread on: Multigrain Crispbread  or your favorite crackers

Directions
Blend cream cheese, using a hand held mixer.
Add curry powder, mayonnaise, garlic powder and salt.
Blend well.
Form the cream cheese mixture into a ball, using a rubber spatula.
Pour chopped walnuts onto a clean plate.
Lay the ball of cream cheese mixture on the nuts.
Gently turn it over and pat the walnuts onto all sides.
Cover the top with plastic wrap.
Using one hand holding onto the top, slowly turn the plate over and wrap the plastic all around.
Refrigerate overnight.

Press a depression into the top of the ball.

Quick and Yummy Low Carb Fudgsicle Sundae

Finally, a way to cut back on carbohydrates and have your ice cream, too! You see, I have this romance going on with ice cream. I won’t give it up for very long. That’s why each time  I would start a low-carb regimen, even though I was doing well, I would quit a few days later. I really missed ice cream. This yummy low-carb fudgsicle dessert hits the spot!

A sugar-free fudge bar/peanut butter combination may sound familiar, if you’ve been a South Beach Dieter. They have a version of it that tastes very good but all of the ingredients are blended together. I’ve adapted the recipe to be more like an ice cream sundae.

 

Yummy Low-Carb Fudgsicle Sundae

Ingredients
1/2 No-Sugar Frozen Fudge Bar
1 heaping Tablespoon Natural Peanut Butter
1/2 cup Reddi Wip whipped cream
Drizzle sugar-free chocolate syrup

Directions

  • Let the frozen fudge bar sit out on the counter for 2-3 minutes till soft enough to cut.
  • Cut the bar in half.
  • Re-wrap one half and put it back in the freezer for the next day.
  • Cut the other half in chunks and place in a bowl along with the peanut butter.
  • Blend with a spoon.
  • Top with Reddi-Wip whipped cream.
  • Make it pretty by drizzling with chocolate syrup.
  • Serve immediately.

Carbohydrate Count:  10 carbs per serving

Low carb diets are quick, effective weight loss solutions. They are healthy and satisfying. For years, though, low carb dieters lamented that they missed desserts. There were a few sugar-free substitutes but the taste was always so-so. Well, this  is one low carb muffin recipe that does not disappoint.  These muffins taste especially good ever-so-slightly warmed up with a dollop of butter added to the top. Melt-in-your-mouth wonderfulness!

Low Carb Lemon Cheesecake Muffin Recipe

Makes 12 muffins – 1 per serving

Ingredients

8 ounces cream cheese, room temperature

2 tbsp butter, room temperature

1/3 cup sugar substitute (I use Pyure Stevia Blend)

1 tbsp lemon juice

1/4 tsp vanilla extract

3 large eggs

1/4 teaspoon salt

1/2 tablespoon baking powder

1/2 cup fine ground almond flour

1/4 cup coconut flour

1 tablespoon Whey Protein Powder (I used vanilla flavor)

  Pyure sweetener for baking #ad

Low Carb Lemon Cheesecake Muffins

Directions

Preheat oven to 350°.

Spray muffin tin with cooking spray, or use a silicone muffin cup/pan.

Cream together butter and cream cheese with a hand mixer.

Add the no-calorie sugar substitute.

Cream together about 2 minutes. Add eggs, one at a time, blending until well combined. Add extract with last egg. Mixture will be very loose.

Add salt, baking powder, almond flour, coconut flour, and whey protein and mix using hand mixer for about 2-3 minutes.

Scrape the sides of the bowl with a rubber spatula.

Scoop the batter into each muffin cup. Do not overfill.

Bake at 350° for 20-25 minutes. They are done when a toothpick inserted in center of muffin comes out clean. Remove from oven and cool completely before removing from pan.

Serving tip: sprinkle with a light sprinkling of confectioner’s sugar (use a sugar free version, if preferred.)

Loaded Low Carb Cheese Crisps That Will Change Your Life!

Hey, low carb dieters, do you miss crackers? Do you miss baked potatoes? Do you miss potato skins? This fabulous creation – cheese crisps – can satisfy all those cravings. When it comes to loving your low carb diet, this recipe can be a game-changer!

The crisp is very low carbohydrate and high protein:  cheese and egg whites. The toppings are up to you. When I made this batch I was going for the “potato skins” experience so I loaded them up with sour cream, bacon, green onions and guacamole.

 

I found the basic recipe, which I share with you below, 2 Ingredient Cheese Crisps on Lynsey’s blog:  Moscato Mom. It sounded so good.

 

I did not have a mini-muffin pan so I swerved to the other end of the spectrum and used my new non-stick jumbo muffin pan. As long as you spread the batter thinly, they bake very well.

 

The crisps come out of the pan perfectly but they are not strong enough to dip so I loaded the toppings by spooning them on. Then I could handle them like an appetizer and just pop them in my mouth.

Alert:  the loaded cheese crisps taste so good that, if you aren’t sharing them with someone else, you can easily eat them all yourself.  I did!  They were my lunch and I loved every low-carb bit of them! 

 

Loaded Low-Carb Cheese Crisps

Ingredients

1/2 cup shredded cheddar or Colby-jack cheese

2 egg whites

Toppings

Cooked bacon cut into pieces

Green onion – sliced into pieces

Guacamole

Sour Cream

jumbo non stick muffin tin

Glad Jumbo Muffin Pan Nonstick – Heavy Duty Metal Cupcake Tin with Large Baking Cups, Jumbo 6-Cup

 

 

Directions

Preheat oven to 400°

Spray large muffin tin with pan spray

Beat 2 egg whites slightly.

Add shredded cheese.

Combine and spoon evenly into 6 muffin tins.

Bake for 10-12 minutes until edges are getting slightly brown.

Cool 2-3 minutes.

Gently remove, prying them up from the edge using a fork or knife.

Spoon on your favorite toppings and enjoy.

 

*This recipe fits well on the Keto diet and also works for Trim Healthy Mama’s THM-S meals.

Eating Low Carb But Miss Cookies? This One Tastes Amazing!

This low-carb sugar free cream cheese cookie recipe is absolutely delicious and I knew it would be even before I ever baked them. How did I know? They passed the raw cookie dough test!

Eating uncooked cookie dough is not recommended – sshhh, don’t tell anybody! My secret is that I have always been able to tell whether a cookie recipe is going to be good by tasting the dough! How about you?

When my mom made cookies, she would have to guard that bowl. My brother and I were likely to eat half of it before it got to the oven. I know we are not alone in this. Wherever did they come up with cookie dough ice cream if someone didn’t do it? Well, this low-carb sugar free cream cheese cookie recipe passes the cookie dough test!


Tonight I needed some cookies with my coffee. I didn’t have time to chill the dough 4 hours as recommended in the original recipe. In fact, I have never let it chill any time that I have made it! When I want cookies, I want them NOW! So, they are not as pretty as the cookie press version like Lisa did on the Low Carb Yum website but, oh do they taste great. I made tonight’s batch like you make snowball cookies – rolled like a meatball. The time before that I made them bigger and pressed the balls down with the bottom of a glass. Two different looks – one great taste! 

I follow the Trim Healthy Mama eating plan. These cookies fit well with an “S” meal. They will work for most any low carb plan. You will have to check to be sure. Look at the ingredients and find out what your plan says. If you follow Atkins or South Beach, I’ll bet they work for Phase 2. There will be a time when you will happily be able to include this treat!

Low Carb Sugar-Free Cream Cheese Cookies

Adapted from Gluten Free Cream Cheese Cookie Recipe via Low Carb Yum

Ingredients

½ cup butter – room temperature

2 oz. cream cheese – softened

4 T. Pyure sweetener

¼ cup coconut flour

1 cup almond flour

½ tsp vanilla extract

½ egg – yes, you read that right!*

 

Directions

Preheat oven to 350°

Cream together butter, cream cheese and sweetener.

Blend in flours.

Add vanilla and egg.

Mix well.

Scoop a wad of dough on a spoon and roll in your hands, like a meatball.

Place 1 inch apart on a parchment paper covered baking sheet.

Bake 12 minutes or until barely browned.

Cool 2 minutes.

Gently remove (they crumble easily) to a plate.

How do you measure 1/2 an egg? I was asking myself the very same question! Since I took the whole recipe and cut in half, I had to figure out how.  What I did was I took a whole egg and slightly beat it in a little bowl. Then I spooned approximately half of it into the cookie dough and threw the rest away. It worked!

How To Make A Delicious Low Carb Berry Protein Shake

This delicious protein shake is an energy-booster. It is moderately low in carbs (5-7 net carbs from the two milks) and 3-5 net carbs for 1/2 cup raspberries / strawberries. If you are on the Trim Healthy Mama plan, this would be an E meal as it has healthy carbs, no fat and lots of protein. If you want it to be an S, you will have to get some fats into the meal. It will also work with Phase 2 of several of the popular low-carb diets like South Beach or Atkins.

Strawberry Raspberry Low Carb Protein Shake

Low Carb Berry Protein Shake

Ingredients

1/2 cup soy milk

1/2 cup coconut milk

1 packet Truvia stevia sweetener

1 scoop  Whey Protein (sweetened with stevia)

1/2 cup frozen berries (raspberries and strawberries mixed)

1 pinch Himalayan Pink Salt


Directions

Pour coconut and soy milks into a blender.

Add Truvia sweetener, pink salt and frozen berries.

Blend until the berries are chopped up.

Add the whey protein.

Blend until smooth.*

Pour immediately into a tall glass and enjoy!

*Tip: do not overblend after the whey protein is added. The more it mixes, the frothier it will be. Unless you like it that way, I recommend you stop after it is mixed just enough to eliminate lumps. Probably about 30 seconds.
