Super Easy One-Skillet Meal Your Whole Family Will Love

Out of time and nothing for dinner?  Put this great “unplanned” one-skillet meal into your arsenal of dinnertime rescues – your family will be so happy. Goulash is my kid-friendly go-to dinner when I am running short on time, energy or ideas and it is a big hit every time!

Goulash is a title that has been highly stretched over the years. My apologies to all authentic Hungarian Goulash lovers out there. It is not my intent to insult a dearly loved cultural cuisine but so many American families do call this goulash – I did my research on this – that I am sticking with it. 🙂

Easy One-Skillet Goulash Recipe

Ingredients

2 lbs. lean ground beef
1 can sloppy joe sauce
Pasta (elbows or shells work great)
Shredded cheddar cheese
 Goulash one-skillet meal for a quick easy dinner! #recipes

Directions

Boil water in a sauce pan.
Add pasta* and boil till tender according to box directions.
Drain.
Fry the ground beef in a large non-stick skillet on medium – medium high heat.
Drain the fat when the ground beef is no longer pink.
Add full can (16 oz -ish) of sloppy joe sauce.
Mix through.
Add pasta to skillet and gently mix in.
Heat for 5 minutes on medium.
Dish up into microwavable bowls.
Add approximately 1/2 cup of shredded cheese to the top.**
Serve.

*Shells, elbow macaroni, spirals or rotini all work well.
**If you prefer your cheese to be very melted, microwave each bowl 30 seconds.

This recipe has been streamlined to make it so easy and quick – perfect for a weeknight family meal. Add homemade cornbread and you’ll have a dinner that gets ‘oohs and ahs” from all of your adoring fans!

Stuffed Peppers are a quick ‘n easy recipe that will satisfy the taste buds of anyone who enjoys a little spice in their food. People who enjoy Mexican or Italian food should really love stuffed peppers!
Stuffed Peppers can be found all over the world. Variations are seen in Mexican, Romanian, Bulgarian, Indian, Mediterranean (especially Greek ), Scandinavian, Middle Eastern, Spanish and American cuisine. Though there are many recipes out there for “Italian Stuffed Peppers“, they are named for style and seasoning, not origin.
Classic Stuffed Peppers are made with green bell peppers, ground beef and rice. The peppers are par-boiled first to assure softness of the pepper casing.

This Quick ‘n Easy Stuffed Pepper Recipe eliminates the par-boiling step altogether. Rather than cutting off the top of the pepper, clean out the interior and slice it length-wise. Each half looks like a boat.  Lay each “boat” open-side up and pile it with the raw filling. As it bakes, the pepper shells will soften, cutting off 10-15 minutes of your cooking time.

Quick ‘n Easy Stuffed Peppers Recipe

Ingredients
6 raw green peppers
2 lbs. lean uncooked ground beef
2 cups rice, cooked
1/4 cup finely chopped onion
1 1/2 cups shredded cheddar cheese
3 cups tomato sauce
salt & pepper to taste

Directions
Preheat oven to 350°.
Prepare rice according to directions.
Let it cool slightly as you move on to the next step.
Rinse the green bell peppers under cold water. Cut out the core of each pepper at the top and slice length-wise. Remove seeds and membrane from inside.
Lay the peppers, open side up, in a large baking dish. (see photos below)
Combine ground beef, onion and rice. Stuff each “pepper boat” with the meat mixture, piling it up slightly in a dome. As it bakes, it will decrease in size.
Sprinkle with salt and pepper.
Pour tomato sauce over each pepper.
Bake at 350° for 45 minutes or until done.
Generously sprinkle shredded cheddar cheese on each and return to oven until cheese is melted.
Serves 6-8.

Cranberry Onion Balsamic Relish Recipe for Pork Dinners

Love having pork loin or pork chops for dinner? I do! What do you serve with them? Our pork meals may have au gratin potatoes and veggies on day and then buttered noodles and corn on the cob the next. What I always do is serve apple sauce alongside. Apple sauce and pork tastes so good together… but this time I was looking for something different.

Then I came across a fig relish recipe that sounded great but I didn’t have all the ingredients on hand so I crafted my own using cranberries, onion and balsamic vinegar. It was tangy and delicious – a perfect compliment to pork loin with rice pilaf and brussel sprouts.  Here is the recipe. Try it — I think you’ll like it!

Cranberry Onion Balsamic Relish

Ingredients
1 cup dried cranberries
3/4 cup fresh chopped onion
1 T Soy Sauce
2 T balsamic vinegar
4 T water
1/4 tsp garlic powder

Directions
Spray non-stick skillet with cooking spray.
Heat skillet on medium high heat.
Add all ingredients.
Stir.
Bring to a boil.
Reduce heat to simmer for 10 minutes, gently stir.
Serve.

Spanish Chicken Dish – Chicken Chilindron

Chicken Chilindron is a Spanish chicken dish enjoyed by our family for many years. Piled with green and red peppers, bacon, mushrooms and onions in a thick tomato sauce, the “veggie group” is well taken care of – all you need is some rich, creamy mashed potatoes on the side. Perfect make-ahead meal.

Chicken Chilindron Recipe

Ingredients

4 split chicken halves, skin on
1T butter
3 T cooking oil
1 green pepper. sliced
1/2 red pepper, sliced
1 medium onion, sliced
2 cups fresh mushrooms, sliced
6 slices cooked bacon
1 12 oz can tomato paste
1 can chicken broth
1/2 cup cooking sherry
1/4 cup soy sauce
1 tsp tarragon
1 tsp garlic powder

Directions

Preheat oven to 350°
Coat 13 x 9 baking dish with nonstick pan spray
Place chicken halves in dish and put large pat of butter on each

Bake at 350° for 20 minutes

While the chicken is baking…

Core peppers
Cut peppers and onion into slices
Wash mushrooms and slice
Heat large nonstick skillet to medium-high, add oil
Add precooked, broken up bacon to heated skilled (medium)
Saute for a few minutes
Add the cut up veggies
Saute till veggies are a little bit soft

Take the chicken out of the oven and pour the veggies all over the top.

Add the tomato paste to the empty skillet.
Combine with chicken broth, soy sauce, cooking sherry, tarragon and garlic powder.
Blend over medium heat and then spoon onto the chicken and veggies.
Return to oven and bake for another 60 minutes.

Tastes delicious with mashed potatoes on the side.

Do you own a bean pot? Some bean pots are so beautiful that people use their’s as a centerpiece on the dining room table!  That is exactly what I did with mine but I did remember that bean pots were designed to be used for making dinner.

Here is a classic bean pot recipe which I make in my  bean pot: Coke® Roast. This recipe is so easy to make and tastes oh so good.

Coke® Roast Recipe

Ingredients

2-3lb beef roast
12oz can of Coca-Cola® (regular, not diet)
10 oz can of cream of mushroom soup
1 packet dry onion soup mix (optional)


Directions

Place roast in bean pot, add soup and coke.
Cover and bake at 350 degrees for 2 1/2 to 3 hours.
Serve and enjoy your family’s rave reviews.
