Some recipes are timeless, like classic deviled eggs.. They are perfect for cookouts and picnics. Just put a big tray of them on the table and watch them disappear. Have you noticed that they can be popped in a mouth with no real chewing? LOL Of course, the taste is so good you will WANT to chew them.

Classic deviled eggs recipe

In my adventure of low-carb dieting, I am resurrecting recipes that I had previously skipped – deviled eggs, for instance.
Deviled eggs do not fit with traditional weight loss plans. They contain mayonnaise, which is high in fat with lots of calories. It is totally different with low carb eating plans. On a low-carbohydrate diet, be it Atkins, South Beach, Carbohydrate Addicts, Keto or Trim Healthy Mama (S meals) – the more deviled eggs the merrier!. That makes me very happy!

Classic deviled eggs are easy to make and keep well in the refrigerator. When I make 12 of them (6 eggs, cut in half) they last me about 5 days and taste great to the very last one.  Be aware, when serving this delicious side dish at a party, make lots of them. They disappear fast!

Classic Deviled Eggs Recipe

Easy to make, classic deviled egg recipe! #deviledeggs #eggs #recipes #lowcarb Ducks 'n a Row

Ingredients

6 hard boiled eggs, peeled & cooled
1/4 cup real mayonnaise
3/4 – 1 tsp white vinegar
1 tsp prepared “yellow” mustard
dash salt and dash pepper
dill weed and /or paprika

Directions

Hard boil the eggs, cool, peel and cut in half lengthwise.

Gently edge the yolk out of the white and place in a small mixing bowl.

Mash the yolks together with a fork.

Blend in mayonnaise, vinegar, mustard, salt & pepper.

Spoon the mixture into the center of each egg-white shell.

Lightly sprinkle with either dill weed or paprika on top.

Refrigerate.

Serves 6-12 people.

Yesterday I needed a mid-afternoon snack and didn’t know what I was going to do. Then I had a brain storm. I have no idea why I never thought of this before but I thought of a new way to eat zero-fat plain Greek Yogurt as a snack and I love it.

This is so simple, no recipe is required but here it is:

Low Carb Greek Yogurt Snack Recipe

Ingredients

2/3 cup fat-free plain Greek Yogurt

1/8 tsp coarse sea salt

Chili Powder (sprinkle on to taste)


Directions

Sprinkle salt onto yogurt.

Mix it through with your spoon.

Sprinkle chili powder on top and enjoy!

Low Carb Mozzarella Cheese Crisps

Looking for some yummy snacks to enjoy on your low carbohydrate eating plan? These low carb mozzarella cheese crisps will hit the spot! Top them with a slice of pepperoni and a dollop of ricotta cheese for a real treat.

This recipe takes about 15-20 minutes to make in its entirety. Just set the oven to preheat on 400° while you whip it up and you will be snacking on these crispy delights soon!

Low Carb Mozzarella Cheese Crisps

Ingredients

1/2 cup shredded mozzarella cheese

2 egg whites

Sliced pepperoni *optional

Ricotta cheese *optional

Tip:  if you are craving pizza, just add a little spoonful of low carb pizza sauce on top of each crisp.

Directions

Preheat oven 400°

Spray a large muffin pan – 6 muffins per pan – with non-stick cooking spray.

Slightly beat 2 egg whites with a fork.

Add cheese and mix well.

Spoon evenly into the muffin pan.

Bake for 10-12 minutes*

*Be sure that they are brown on the edges so that they taste crisp. If you take them out too soon, they will taste more like an omelette. Not what you are looking for!

Simple Summary of the Trim Healthy Mama Plan

So, what is Trim Healthy Mama, anyway? When following the simple principles of Trim Healthy Mama (or THM for short,) you will find that you can eat food from every food group. Nothing is excluded. Enjoy meats, fish, poultry, eggs, butter, seafood, fruits, vegetables, yogurt, cheese, nuts and grains.

 

Yummy desserts abound on Trim Healthy Mama but, rather than tacking them onto the end of a meal, their philosophy is “Why not HAVE it as a meal!“ I love that!

 

The recipes are endless, though it is not necessary to become a gourmet cook.  You can just snack your way through, if you don’t want to make elaborate meals. This way of life is liberating and will become second nature soon as you get the hang of it. You will find that, with little effort, you are now eating in a very healthy way. Not only will you start experiencing the magical “Trim Healthy Mama shrink” but you will feel better, too.

It is not my desire to recreate their book  but I do want to give you a glimpse of the basic principles. If you are hungry to know more, either borrow the book from the library, browse their website or buy a copy.

 

I am guessing that you will do what I did. After I browsed the library version, I had to get my own. I was going for it. I lost 16 pounds in about 10 months.  Nice and slow and steady. I am short, so 16 pounds makes a big difference on me. The greatest triumph was in keeping it off even during the holidays. That is a first for me!

 

Simple Summary of what to eat on the Trim Healthy Mama plan

How To Do the Trim Healthy Mama Plan*

*Information taken directly from the abbreviated THM booklet (no longer available but the complete book is really what you need, anyway.)

  1. Know that too much glucose in the bloodstream is the cause of overweight and our modern diet is the culprit.
  2. We get energy from our food and there are two primary sources of energy: carbohydrates and fats.
  3. Eating carbohydrates and fats will promote weight loss if they are eaten APART from each other. This is key!
  4. The presence of protein is vital every time you eat. Protein will prompt your body to produce the fat-burning hormone “glucagon.” So, whenever you eat something say to yourself “Where’s the protein?”
  5. Eat decadent S-meals [S = Satisfying] rich with protein and fats and very few carbs. The S-meals are what many of us would call “low carb” meals. The carbs can come from green leafy vegetables and other low glycemic veggies.
  6. Mix it up with some E-meals [E=Energizing] These meals have almost no fats. They are made up of healthy grains (like oats, quinoa or brown rice) lean protein like chicken or fish or even plain fat-free Greek yogurt, fruits and veggies. As you can see in my Healthy Oatmeal Pancakes with blueberries E-meal recipe you can have a tiny dollop of butter, for flavor. These pancakes taste so good. I have them at least once a week!
  7. If you eat an S meal and the next one is going to be an E meal, be sure that  you eat them 2 1/2 to 3 hours apart.

These 7 points are the very simple basics that I keep in mind as I construct my meals every day.  Don’t stop with this simple summary, though. Take a look at their book and get the full picture.  If you don’t want to start with the full book, Trim Healthy Mama Plan, they have a new “bare bones” summary book available that will give you a nice overview. But, I am telling you, you are going to want the whole book when you get started. You will love it!

This Is The Low Carb Cheesecake Recipe Of My Dreams!

Yes, this is the low carb cheesecake recipe of my dreams! I longed for a really good substitute for classic New York Style Cheesecake and I finally figured it out!  Let me share it with you.

I do so well on low carb eating* and I really like the food. The only little glitch I run into is missing certain high-carb treats.  Cheesecake is one of them. I love cheesecake and require it at least every 8 weeks. LOL! You’d think with all the low carb ingredients in it that it would be easy to make a really low carb version. But every low carb cheesecake recipe I made was only so-so.  The Cheesecake In A Mug was definitely close but it still did not quite satisfy that need.

So, I did some experimenting and finally came up with a recipe that is so close to classic New York Style Cheesecake that I took pictures of it, knowing that I would be sharing it with you.  My family loves it, which is an additional benefit. I get tired of making something for me and something different for the rest of the family, don’t you? You can serve this to the crowd. Just know that you will need to protect your share, though, or make more. It disappears fast.

Low Carb New York Style Cheese Cake Recipe

Ingredients

1 8oz. brick of cream cheese

¼ cup Pyure* sweetener

1 egg

¼ tsp vanilla extract

1 ½ T sour cream

Fresh or frozen (thawed) blueberries for topping

1 squirt whipped cream


Directions

Preheat oven 350°

Blend until creamy, about 3 minutes

Pour into a buttered baking dish

Bake for 50 minutes

Cool in refrigerator

Serve with fresh blueberries and a dollop of whipped cream

*Pyure granulated no-carb sweetener is a combination of Stevia and Erythritol.
