Easy Recipe for Pesto and Eggs – Low Carb

Looking for a little variety for breakfast? Make pesto eggs!

This recipe is an adaptation of a mint pesto egg recipe featured in Good Housekeeping Magazine this month. They have quite a collection of delightful egg recipes in there. This one looked especially good but I am not a “mint person.” So, I used classic pesto instead and does it taste delicious.
As someone who loves “quick ‘n easy,” I purchased a dab of prepared pesto at my grocery store for .45 cents, instead of making it.  Only .45 cents?  I didn’t need much! The store has a luscious Mediterranean olive bar with a variety of selections including PESTO! So, here is how to make Pesto Eggs, the easy way:
Delicious low carb recipe for pesto eggs


Pesto Eggs Recipe

Ingredients
1 tsp. Classic Pesto
1 T. Heavy Cream
1 Large Egg
4 oz porcelain ramekins
Set of 6 porcelain 4 oz. ramekin bowls – oven safe for baking!  #AD
 
Directions
Preheat oven to 425°
Grease the interior of a 1/2 cup sized Ramekin (I used butter)
Pour in 1 T. heavy cream
Add 1 large egg
Dollop 1 tsp. pesto on top
Place Ramekin on baking sheet
Bake at 425° for 12-16 minutes till white is set and yellow is still runny.
Serves 1
Double, triple or whatever for more servings. Just line up the Ramekins on the baking sheet and bake together.
This recipe is extremely low-carb and works well with any number of low-carb diets including as an S meal for THM (Trim Healthy Mama)

How To Make A Delicious Shrimp Salad In 5 Minutes

Shrimp Salad Divan is a simple, low-carb dish that can almost literally be “thrown together.” In fact, that’s what I did and now it is one of my favorite lunches.

The story behind this shrimp salad is that I had run out of  lime. If there had been lime on hand, that would have been my dressing. Since it was not, I got creative. Mayonnaise, lemon juice and curry powder create the “divan” touch to this salad and it tastes so good! Crisp, tasty, low carbohydrate. Perfect!

Shrimp Salad Divan Recipe

Ingredients

Lettuce
Grape Tomatoes
8 jumbo shrimp (frozen) thawed and cut into pieces
1/2 cup real mayonnaise
1 T. lemon juice
Curry powder, to taste
Sea Salt, sprinkle

Directions

Chop lettuce and put on a plate.
Add grape tomatoes, sliced in half.
Thaw the shrimp, drain juice.
Pull off the tails and cut into bite-size pieces.
Place the shrimp on top of the salad.
Blend mayo and lemon juice.
Spoon on top of the salad.
Sprinkle with curry powder and sea salt.
Serves 1

Classic Deviled Egg Recipe

Some recipes are timeless, like classic deviled eggs.. They are perfect for cookouts and picnics. Just put a big tray of them on the table and watch them disappear. Have you noticed that they can be popped in a mouth with no real chewing? LOL Of course, the taste is so good you will WANT to chew them.

Classic deviled eggs recipe

In my adventure of low-carb dieting, I am resurrecting recipes that I had previously skipped – deviled eggs, for instance.
Deviled eggs do not fit with traditional weight loss plans. They contain mayonnaise, which is high in fat with lots of calories. It is totally different with low carb eating plans. On a low-carbohydrate diet, be it Atkins, South Beach, Carbohydrate Addicts, Keto or Trim Healthy Mama (S meals) – the more deviled eggs the merrier!. That makes me very happy!
Classic deviled eggs are easy to make and keep well in the refrigerator. When I make 12 of them (6 eggs, cut in half) they last me about 5 days and taste great to the very last one.  Be aware, when serving this delicious side dish at a party, make lots of them. They disappear fast!

Classic Deviled Eggs Recipe

Ingredients

6 hard boiled eggs, peeled & cooled
1/4 cup real mayonnaise
3/4 – 1 tsp white vinegar
1 tsp prepared mustard
dash salt and dash pepper
dill Weed and /or paprika

Directions

Hard boil the eggs, cool, peel and cut in half lengthwise.

Gently edge the yolk out of the white and place in a small mixing bowl.

Mash the yolks together with a fork.

Blend in mayonnaise, vinegar, mustard, salt & pepper.

Spoon the mixture into the center of each egg-white shell.

Lightly sprinkle with either dill weed or paprika on top.

Refrigerate.

Serves 6-12 people.

Yesterday I needed a mid-afternoon snack and didn’t know what I was going to do. Then I had a brain storm. I have no idea why I never thought of this before but I thought of a new way to eat zero-fat plain Greek Yogurt as a snack and I love it.

This is so simple, no recipe is required but here it is:

Low Carb Greek Yogurt Snack Recipe

Ingredients

2/3 cup fat-free plain Greek Yogurt

1/8 tsp coarse sea salt

Chili Powder (sprinkle on to taste)


Directions

Sprinkle salt onto yogurt.

Mix it through with your spoon.

Sprinkle chili powder on top and enjoy!

Low carb diets are quick, effective weight loss solutions. They are healthy and satisfying. For years, though, low carb dieters lamented that they missed desserts. There were a few sugar-free substitutes but the taste was always so-so. Well, this  is one low carb muffin recipe that does not disappoint.  These muffins taste especially good ever-so-slightly warmed up with a dollop of butter added to the top. Melt-in-your-mouth wonderfulness!

Low Carb Lemon Cheesecake Muffin Recipe

Makes 12 muffins – 1 per serving

Ingredients

8 ounces cream cheese, room temperature

2 tbsp butter, room temperature

1/3 cup sugar substitute (I use Pyure Stevia Blend)

1 tbsp lemon juice

1/4 tsp vanilla extract

3 large eggs

1/4 teaspoon salt

1/2 tablespoon baking powder

1/2 cup fine ground almond flour

1/4 cup coconut flour

1 tablespoon Whey Protein Powder (I used vanilla flavor)

  Pyure sweetener for baking #ad

Low Carb Lemon Cheesecake Muffins

Directions

Preheat oven to 350°.

Spray muffin tin with cooking spray, or use a silicone muffin cup/pan.

Cream together butter and cream cheese with a hand mixer.

Add the no-calorie sugar substitute.

Cream together about 2 minutes. Add eggs, one at a time, blending until well combined. Add extract with last egg. Mixture will be very loose.

Add salt, baking powder, almond flour, coconut flour, and whey protein and mix using hand mixer for about 2-3 minutes.

Scrape the sides of the bowl with a rubber spatula.

Scoop the batter into each muffin cup. Do not overfill.

Bake at 350° for 20-25 minutes. They are done when a toothpick inserted in center of muffin comes out clean. Remove from oven and cool completely before removing from pan.

Serving tip: sprinkle with a light sprinkling of confectioner’s sugar (use a sugar free version, if preferred.)

Looking for some yummy snacks to enjoy on your low carbohydrate eating plan? These low carb mozzarella cheese crisps will hit the spot! Top them with a slice of pepperoni and a dollop of ricotta cheese for a real treat.

This recipe takes about 15-20 minutes to make in its entirety. Just set the oven to preheat on 400° while you whip it up and you will be snacking on these crispy delights soon!

Low Carb Mozzarella Cheese Crisps

Ingredients

1/2 cup shredded mozzarella cheese

2 egg whites

Sliced pepperoni *optional

Ricotta cheese *optional

Tip:  if you are craving pizza, just add a little spoonful of low carb pizza sauce on top of each crisp.

Directions

Preheat oven 400°

Spray a large muffin pan – 6 muffins per pan – with non-stick cooking spray.

Slightly beat 2 egg whites with a fork.

Add cheese and mix well.

Spoon evenly into the muffin pan.

Bake for 10-12 minutes*

*Be sure that they are brown on the edges so that they taste crisp. If you take them out too soon, they will taste more like an omelette. Not what you are looking for!

Loaded Low Carb Cheese Crisps That Will Change Your Life!

Hey, low carb dieters, do you miss crackers? Do you miss baked potatoes? Do you miss potato skins? This fabulous creation – cheese crisps – can satisfy all those cravings. When it comes to loving your low carb diet, this recipe can be a game-changer!

The crisp is very low carbohydrate and high protein:  cheese and egg whites. The toppings are up to you. When I made this batch I was going for the “potato skins” experience so I loaded them up with sour cream, bacon, green onions and guacamole.

I found the basic recipe, which I share with you below, 2 Ingredient Cheese Crisps on Lynsey’s blog:  Moscato Mom. It sounded so good.

I did not have a mini-muffin pan so I swerved to the other end of the spectrum and used my new non-stick jumbo muffin pan. As long as you spread the batter thinly, they bake very well.

The crisps come out of the pan perfectly but they are not strong enough to dip so I loaded the toppings by spooning them on. Then I could handle them like an appetizer and just pop them in my mouth.

Alert:  the loaded cheese crisps taste so good that, if you aren’t sharing them with someone else, you can easily eat them all yourself. I did! They were my lunch and I loved every low-carb bit of them! 


Loaded Low-Carb Cheese Crisps

Ingredients

1/2 cup shredded cheddar or colby-jack cheese

2 egg whites

Toppings

Cooked bacon cut into pieces

Green onion – sliced into pieces

Guacamole

Sour Cream


Directions

Preheat oven to 400°

Spray large muffin tin with pan spray

Beat 2 egg whites slightly.

Add shredded cheese.

Combine and spoon evenly into 6 muffin tins.

Bake for 10-12 minutes until edges are getting slightly brown.

Cool 2-3 minutes.

Gently remove, prying them up from the edge using a fork or knife.

Spoon on your favorite toppings and enjoy.

 

*This recipe fits well on the Keto diet and also works for Trim Healthy Mama’s THM-S meals.

This Is The Low Carb Cheesecake Recipe Of My Dreams!

Yes, this is the low carb cheesecake recipe of my dreams! I longed for a really good substitute for classic New York Style Cheesecake and I finally figured it out!  Let me share it with you.

I do so well on low carb eating* and I really like the food. The only little glitch I run into is missing certain high-carb treats.  Cheesecake is one of them. I love cheesecake and require it at least every 8 weeks. LOL! You’d think with all the low carb ingredients in it that it would be easy to make a really low carb version. But every low carb cheesecake recipe I made was only so-so.  The Cheesecake In A Mug was definitely close but it still did not quite satisfy that need.

So, I did some experimenting and finally came up with a recipe that is so close to classic New York Style Cheesecake that I took pictures of it, knowing that I would be sharing it with you.  My family loves it, which is an additional benefit. I get tired of making something for me and something different for the rest of the family, don’t you? You can serve this to the crowd. Just know that you will need to protect your share, though, or make more. It disappears fast.

Low Carb New York Style Cheese Cake Recipe

Ingredients

1 8oz. brick of cream cheese

¼ cup Pyure* sweetener

1 egg

¼ tsp vanilla extract

1 ½ T sour cream

Fresh or frozen (thawed) blueberries for topping

1 squirt whipped cream


Directions

Preheat oven 350°

Blend until creamy, about 3 minutes

Pour into a buttered baking dish

Bake for 50 minutes

Cool in refrigerator

Serve with fresh blueberries and a dollop of whipped cream

*Pyure granulated no-carb sweetener is a combination of Stevia and Erythritol.
