Shrimp Salad Divan is a simple, low-carb dish that can almost literally be “thrown together.” In fact, that’s what I did and now it is one of my favorite lunches.

The story behind this shrimp salad is that I had run out of  lime. If there had been lime on hand, that would have been my dressing. Since it was not, I got creative. Mayonnaise, lemon juice and curry powder create the “divan” touch to this salad and it tastes so good! Crisp, tasty, low carbohydrate. Perfect!

Shrimp Salad Divan Recipe

Ingredients

Lettuce
Grape Tomatoes
8 jumbo cooked shrimp (frozen) thawed and cut into pieces
1/2 cup real mayonnaise
1 T. lemon juice
Curry powder, to taste
Sea Salt, sprinkle

Easy low carb shrimp salad #recipes

Directions

Chop lettuce and put on a plate.
Add grape tomatoes, sliced in half.
Thaw the shrimp, drain juice.
Pull off the tails and cut into bite-size pieces.
Place the shrimp on top of the salad.
Blend mayo and lemon juice.
Spoon on top of the salad.
Sprinkle with curry powder and sea salt.
Serves 1

Easy Recipe for Pesto and Eggs – Low Carb

Looking for a little variety for breakfast? Make pesto eggs!

This recipe is an adaptation of a mint pesto egg recipe featured in Good Housekeeping Magazine this month. They have quite a collection of delightful egg recipes in there. This one looked especially good but I am not a “mint person.” So, I used classic pesto instead and does it taste delicious.
As someone who loves “quick ‘n easy,” I purchased a dab of prepared pesto at my grocery store for .45 cents, instead of making it.  Only .45 cents?  I didn’t need much! The store has a luscious Mediterranean olive bar with a variety of selections including PESTO! So, here is how to make Pesto Eggs, the easy way:
Delicious low carb recipe for pesto eggs


Pesto Eggs Recipe

Ingredients
1 tsp. Classic Pesto
1 T. Heavy Cream
1 Large Egg
4 oz porcelain ramekins
Set of 6 porcelain 4 oz. ramekin bowls – oven safe for baking!  #AD
 
Directions
Preheat oven to 425°
Grease the interior of a 1/2 cup sized Ramekin (I used butter)
Pour in 1 T. heavy cream
Add 1 large egg
Dollop 1 tsp. pesto on top
Place Ramekin on baking sheet
Bake at 425° for 12-16 minutes till white is set and yellow is still runny.
Serves 1
Double, triple or whatever for more servings. Just line up the Ramekins on the baking sheet and bake together.
This recipe is extremely low-carb and works well with any number of low-carb diets including as an S meal for THM (Trim Healthy Mama)

Buffalo Chicken Dip

Serves 14-16

Ingredients

1 8 oz. pkg cream cheese – softened
1 large can (10 oz) chicken
Hot sauce
Blue cheese dressing (or ranch)
Mozzarella cheese (shredded)
Large tortilla chips

Buffalo chicken dip #appetizers

Directions

Preheat oven to 350°
Spread: softened cream cheese in an oven-safe, microwavable* 1 quart baking dish.
Layer: chicken, hot sauce, blue cheese dressing, shredded cheese.
Bake: 350° oven for 20-25 minutes until hot and bubbly.

*Though you will be heating the dip in the oven, you may wish to “nuke it” (reheat it in the microwave) later on so, be sure to use a baking dish that is microwave-safe. If you are bringing it to a party as your “dish to pass” place the warm casserole dish in a thermal insulated carrier.

Finally, a way to cut back on carbohydrates and have your ice cream, too! You see, I have this romance going on with ice cream. I won’t give it up for very long. That’s why each time  I would start a low-carb regimen, even though I was doing well, I would quit a few days later. I really missed ice cream. This yummy low-carb fudgsicle dessert hits the spot!

A sugar-free fudge bar/peanut butter combination may sound familiar, if you’ve been a South Beach Dieter. They have a version of it that tastes very good but all of the ingredients are blended together. I’ve adapted the recipe to be more like an ice cream sundae.

 

Yummy Low-Carb Fudgsicle Sundae

Ingredients
1/2 No-Sugar Frozen Fudge Bar
1 heaping Tablespoon Natural Peanut Butter
1/2 cup Reddi Wip whipped cream
Drizzle sugar-free chocolate syrup

Directions

  • Let the frozen fudge bar sit out on the counter for 2-3 minutes till soft enough to cut.
  • Cut the bar in half.
  • Re-wrap one half and put it back in the freezer for the next day.
  • Cut the other half in chunks and place in a bowl along with the peanut butter.
  • Blend with a spoon.
  • Top with Reddi-Wip whipped cream.
  • Make it pretty by drizzling with chocolate syrup.
  • Serve immediately.

Carbohydrate Count:  10 carbs per serving

Steak Salad with Bacon Blue Cheese Dressing

This delicious, low carb steak salad was created from “left-overs” We had grilled a sizzling rib eye steak for dinner the night before and there was plenty remaining to be able to make another delightful meal. So I whipped up some bacon blue cheese salad dressing, reheated and cut the steak, tossed it on some crispy greens and, voila – dinner!

Steak Salad Recipe

Ingredients

Romaine lettuce mix
Tomato
Steak, precooked
Bacon Blue Cheese Dressing

Crumbled cooked bacon
Black Olives – optional

Salad spinner

5 quart Cuisinart Salad Spinner 

Directions
Reheat steak in a non stick skillet until warmed through.
Slice up the steak.
Place lettuce mix on a large dinner plate.
Cut tomato into bite size pieces.
Organize the steak and tomato on top – black olives if you like them.
Generously ladle on your homemade Bacon Blue Cheese Dressing.
Serve.
