Classic Oatmeal Raisin Walnut Cookies

What kind of cookies do you like best? My very favorite cookies are oatmeal raisin cookies. Add walnuts to them and it is my perfect world. Just make a batch of these delicious classic oatmeal raisin walnut cookies and you will see what I mean!

Classic Oatmeal Raisin Walnut Cookies

Recipe adapted from Vanishing Oatmeal Raisin Cookies Recipe.

Ingredients

14 T. butter
3/4 cup brown sugar
1/2 cup white granulated sugar
 2 eggs
1 tsp. vanilla extract
1 1/2 cup all-purpose flour
1 tsp. baking soda
1 tsp.  cinnamon
1/2 tsp. salt
3 cups old fashioned oats, dry
1 cup raisins
1/2 cup chopped walnuts*

Directions

Preheat oven to 350°
Cream together butter and both sugars.
Add eggs and vanilla, beat well.
Combine dry ingredients – flour, baking soda, cinnamon and salt – then add them to the butter mixture.
Blend well.
Add oats, raisins and walnuts*
Drop dough onto ungreased cookie sheets in rounded spoonfuls.
Bake 8-11 minutes
Cook 1 minute
Remove to baking rack to complete the cooling process.
Serve or store in closed container.
Makes 24-48 cookies depending on how big you make them!

*Tip: if you like more walnuts in your cookies, press each rounded spoonful in chopped walnuts rather than mixing them through the dough. The dough will stick together better, too. Win-win!

Elegant Jam Thumbprint Cookies Look So Pretty On The Dessert Table

 Jam thumbprint cookies are simple to make and look so lovely on a dessert table! What special occasions can you think of to serve these scrumptious delights? The holidays? Yes! A cookie swap? Naturally! How about baking a gift for someone you love? So simple to make, these cookies are extra special.

Here is the wonderfully simple recipe for you …

Jam Thumbprint Cookie Recipe

You will need:

Electric mixer
Cookie sheets
Parchment paper

INGREDIENTS

2 sticks salted butter, room temperature
1/2 cup of sugar
2 eggs, room temperature
1 teaspoon vanilla extract
Pinch of salt
2 cups of flour
1 cup finely chopped walnuts
3/4 cup jam – any flavor

DIRECTIONS

  • Cream the butter and sugar together using electric mixer for 3 minutes on high.
  • Separate the eggs. Add yolks and vanilla  Save the egg whites in a shallow dish on the side to be used to dip the cookies in before baking.
  • Add the flour and salt. Mix until just combined.
  • Place the dough in the refrigerator for 30 minutes and preheat the oven to 350°.
  • Now, whisk the egg whites till frothy.
  • Roll the dough into balls* about 1 inch in diameter and dip them in egg whites. If using chopped nuts, then roll them in the nuts until covered.
  • Place the balls on parchment lined cookie sheets.
  • Press down in the center with your thumb to make a small indent in the center of the cookie. Do not press too hard or the cookie will fall apart.
  • Fill with 1/2 teaspoon of jam.
  • Bake for 12-15 minutes or until slightly firm. Allow to cool for a few minutes on the cookie sheet to firm up before moving them to a wire rack to finish cooling.

TIP: the dough will stick to your hands  Leave your water faucet running slightly so that you can get your hands damp before forming each ball. The ball will smooth nicely and the stickiness will be greatly reduced.

Strawberry Bread Recipe

Ingredients

1 egg

1 cup sugar

1/3 cup butter

1 tsp vanilla extract

1 tsp baking soda

1 cup strawberries (mashed)

1 2/3 cups flour

Quick Shopping List:


Easy sweetbread made with fresh strawberries

Directions

Blend together egg, sugar and butter.

Add baking soda to mashed strawberries.

Add flour and strawberries alternately to mixture.

Add vanilla.

Grease loaf pan, pour in batter and bake at 350° for 50-55 minutes.

Bread is done when toothpick inserted comes out clean.

What kind of family fun can you cook up this summer? The best fun can actually be very simple. No need for a special occasion. Pull together a surprise Sundae Fundae Party right at home. I made this oh-so-easy Ice Cream Sundae Cake with a Crunchy Pretzel Crust! 
 
I made this delicious pretzel crust ice cream cake in advance so that I could be ready at a moment’s notice. That way all that needs to be done is to cut the cake into serving size squares and pull out an assortment of yummy toppings. Sundae party in minutes! Make it for an impromptu family get together or even a birthday party, graduation celebration, pool party or when the kids have their friends over. It is perfect anywhere, anytime.
This ice cream cake starts with a crunchy pretzel crust, Blue Bunny® PB ‘N Cones™ Ice Cream and Smucker’s Hot Fudge Spoonable Ice Cream Topping. When party time arrives, I will put out bowls filled with a variety of tasty delicacies to crown our works-of-art plus a can of Reddi-Wip® original whipped topping for the finishing touch!

 

 

Crunchy Pretzel Ice Cream Sundae Cake

Ingredients

 

2 1/2 cups pretzels, crushed into small pieces

2/3 cup butter (salted), melted

3 T. sugar

2 46 oz. Blue Bunny® PB ‘N Cones™ Ice Cream
1-2 jars Smucker’s Hot Fudge Spoonable Ice Cream Topping
1 can Reddi-Wip® original whipped topping

 

Various sundae toppings such as:
          • chopped nuts
          • crushed pretzels
          • potato chips
          • sprinkles
          • banana slices
          • cherries
Blue Bunny Ice Cream, Walmart, Smuckers, Reddi-Wip, ice cream sundaes, ice cream cake
Directions
    • Using a large springform pan, make the pretzel crust.* (directions below)
    • Cool the crust.
    • Remove the ice cream from freezer and allow to soften about 15 minutes.
    • Put scoops of ice cream onto the pretzel layer for a thick layer of ice cream.
    • Smooth the ice cream using the back of a spoon.
    • Place the cake in the freezer for 30 minutes.
    • Warm the fudge topping in the microwave 15 – 30 seconds till easily scooped.
    • Spoon the fudge topping onto the top of the cake.
    • Spread the topping, cover with plastic wrap and place back in the freezer.
    • When it is time for your “fundae,” remove the outer part of the pan, set out your toppings and let everyone build their own awesome sundae!

Recipe for Pretzel Layer

    • Place the pretzels in a large freezer bag or leave them in their original bag.
    • Crush the pretzels in the bag, using a rolling pin on the outside.
    • Add sugar to the pretzels and mix through.
    • Melt the butter and combine with the crushed pretzels and sugar.
    • Spread pretzel mixture in a 10 – 11″ spring form baking pan.
    • Bake for 10 minutes at 350°.
    • Cool.

Reddi-Wip is a happy ending to any dessert. I have a can in my refrigerator to put on smoothies, pudding, pie and, of course, ice cream SUNDAES! It was so convenient to buy all of the ingredients at Walmart!
