Do you love coconut? I do. This coconut cake recipe is my kind of dessert!  It is like a cake and coffee cake combined. Doesn’t it look just yummy?

Here’s the recipe for this amazing cake:

Coconut Walnut Glaze Cake Recipe

Ingredients

HOT MILK CAKE
Makes one 9-inch cake
1 tablespoon unsalted butter
1 1/2 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3 large size eggs
1 1/2 cup granulated sugar
1 teaspoon vanilla extract
3/4 cup milk

GLAZE
2 Tablespoons unsweetened coconut milk
1/2 – 1 cup confectioners’ sugar
1 cup shredded natural coconut
*Optional, 1/2 cup chopped walnuts

Directions

HOT MILK CAKE
Preheat the oven 325° F.
  • Lightly butter and flour a 9″ square baking pan and set aside.
  • In a medium sized bowl mix together the flour, baking powder and salt.
  • In a mixing bowl beat the eggs and sugar until thick, about 5 minutes the beat in the vanilla.
  • Meanwhile in a saucepan on the stove top, heat milk and butter until simmering. Stir and watch to not scorch.
  • Slowly add the egg mixture in a slow and steady stream as you continue beating until well combined.
  • Fold the dry ingredients into the hot milk mixture until just combined. Don’t over beat.
  • Pour the batter into the prepared pan.
  • Bake for 55-60 minutes or until golden brown and the cake is starting to pull away from the sides of the pan.
  • Remove from the oven and sit the pan on a cooling rack.
  • Cool cake in pan for 5 minutes. Poke a few holes in the cake with a fork and drizzle with glaze while cake is still warm.

 

GLAZE
  • Prepare the glaze to to be ready to drizzle over the cake while it is still warm.
  • Whisk together the coconut milk, and confectioner’s sugar, until smooth.
  • If it is too thick, stir in a little more coconut milk. If the glaze is to thin, stir in more confectioners’ sugar. Stir in the coconut and chopped walnuts.
  • Serve this cake warm...

The taste is amazing and it is so easy to make. From start to finish, I can make it in 30 minutes. And, another big benefit for me, it is low carb. The carbohydrate content is negligible. Parmesan Crusted Chicken Recipe

Serves 4

Ingredients

4 boneless chicken breasts

1/2 cup Hellman’s mayonnaise

1/4 cup grated Parmesan cheese

1 T. plain or Italian seasoned bread crumbs

Great low carb dinner featuring Parmesan Crusted Chicken #lowcarb #recipes

Directions

Preheat oven to 425°

Place chicken breasts on foil covered baking sheet.

Combine mayonnaise and Parmesan cheese and spoon onto each breast.

Sprinkle with the bread crumbs.

Bake 20 minutes until juices run clear.

This dish tastes great served with lots of veggies – like broccoli or cauliflower – or rice (caution, rice is NOT low carb!)

Stuffed steak rolls recipe

 

This recipe is so easy to make and is such a nice change of pace for your dinner menu.  Stuffed steak rolls are simply prepared stuffing mix rolled up inside a thinly cut piece of beef and cooked in a baking pan. Some people serve it with a light gravy or your can do what I did which is to add beef broth to the natural juices in the pan and pour it over the cooked rolls to add some moisture.

How To Make Stuffed Steak Rolls

 

Ingredients

1/4″ sliced uncooked steak (top round, bottom round or flank steak)

1/3 – 1/2 cup precooked stuffing (I used this great Matzo Stuffing recipe for this recipe) per roll

Low salt beef broth

Directions

Lay a slice of the beef out on a counter.

Place 1/3 – 1/2 cup onto the middle of the beef

Roll it up horizontally.

Fasten the top with one wooden toothpick.

Lay the rolls next to each other in the baking pan, toothpicks up.

Pour some beef broth over the top to keep them moist.

Bake on 350° for 1 hour.

Serve.

Not to change the subject or anything but, how is kitchen clean up going?  My biggest frustration over the years has been the never-ending battle with pet fur.  I love my dogs but they endlessly shed.  Finally, I found the best pet hair vacuum I have ever used and I have continued to enjoy it years later. Tonight we had sizzling rib eye steaks for dinner. I seasoned them with Montreal steak seasoning and then cooked them to perfection on our gas grill.

It just so happened that we had some sliced fresh mushrooms on hand. It was simple to put together sautéed mushrooms on the stove to top that luscious slab of beef!  In fact, they looked so pretty on the plate, I wanted share the moment with you. You should make some yourself! The recipe is easy-peasy, I promise you.

How To Make Simple Sautéed Mushrooms

Ingredients
Sliced fresh mushrooms
Salted butter
Cooking sherry
Garlic powder
Salt
Directions
Preheat a non-stick skillet on medium
Melt 2-3 T butter in your skillet.
Add 1-2 T sherry and a dash each of garlic powder and salt, according to taste.
Heat on medium until the mushrooms soften and reduce in size.
Turn heat to low.
Serve them on top of your favorite steak.

Mushrooms perfectly sauteed in a butter wine sauce are my idea of a perfect side dish for a hot, sizzling steak! #recipes #tips Share on X

Meatballs-A Delicious Warm-Me-Up Meal for a Cold Winter’s Night

What do you serve your family on a cold winter’s night? We have a number of tummy-warming favorites but there are some days that there can only be one: Spaghetti and Meatballs! Nothing else will do!

Two of my best friends are Italian, Rosemary and Annie Marie. They make it all from scratch and it tastes wonderful! Any restaurant would be proud.
My version is less authentic. Partially homemade, partially Prego. It won’t win awards but it’s very easy and my family likes it a lot. Try this on for a size!

Homemade Meatballs

Makes 12 meatballs
1 lb 90% lean ground beef
1/4 cup unflavored bread crumbs
2 eggs
 dash of dried onion flakes
1/2 tsp. garlic powder
dash dried oregano
dash dried parsley flakes
Mush it all together and form into meatballs approximately 2 inches in diameter. Put on foil-covered baking sheet and bake at 350 degrees until juices run out. Place the meatballs in saucepan of piping hot spaghetti sauce.

The Spaghetti Sauce

1 jar Prego Traditional flavor sauce
1 small can tomato paste
1 tsp. sugar
Add garlic powder and dried basil to taste
Add water and stir until it is the desired consistency.

Prepare a box of spaghetti, per the directions on the box, and voila! You have a wonderful hot meal for a cold winter’s night.

Serve it with a tossed salad and some Italian bread with butter on the side.
